Hey there... Being an avid kayak angler another DIY as far as the t-bolts you can go to Lowe's or home Depot and use the toilet t- bolts they work just as good I've made a lot of DIY gear track holders out of PVC as well.

In general yes but I would make sure to close it if you ride around. They are plastic so idk how much force they can withstand. Metal ones would hold up better if you ride around with it open

You do know that stainless steel in contact with aluminium causes it to corrode.

I am aware however it's still the best marine fastener aside from aluminum rivets. The screws are also coated, which helps.
