This recipe worked for me, and it only took me 50 years of my life to find out the secret to making fluffy rice! I love it with the cumin seed also! I think the magic of making this rice is rinsing it well, before cooking, and also letting it sit for an hour before cooking!thank you!

Worked flawlessly. I tried my best with a rice cooker and using less water but the rice was still way too lumpy. Ideal for eating with chopsticks but not good for fried rice. The rice with this method worked flawlessly. The rice was perfectly separated. Give it another half an hour or so to cool down and make it more robust, then use in the wok for fried rice. And this even worked perfectly with Thai jasmine rice. Works even better with basmati - although in this case I tend to add jeera seeds to the water.

Namaste. I've always cooked basmarti rice the reduction way. After cleaning 3 times using the pot I'm going to cook in, I then add water using my nuckles to get the water level right. I then stir in salt then put the lid on. Take too high boil then turn down to very low. After about 5 minutes I then turn heat off leaving the lid on. After standing for another 5 minutes it's ready to go. Fluffy and delicious! * Could you please tell me why your way might be better? Thanks 🙏🏼

Hi, I wouldn't say it's better, it's just how a household cooks. My mother and late grandma have always used this method hence why I do, had they used the method you do i would be doing the same. Thanks, another great video. I think you're right to use a quality, extra long grain rice. Supermarket's own brand Basmati doesn't have the same aroma, neither does it cook as nicely. I buy a big sack of wedding rice from an Asian shop and it works out the same price per kilo as the inferior 1kg bags of supermarket basmati. I am perfectly capable of cooking rice but was bought a rice cooker last year, and often use it to free up room on the hob. Once you know your rice it cooks it perfectly, with no fear of over-cooking if distracted. But as you say freezing rice works great too, sometimes I think it frees the grains up even more. I'm convinced curries mature and improve in the freezer, somehow.

Thank you for the lovely comment! Agree about the rice, it takes some time to find the right one.

I just rinse it a couple of times then through it into the boiling salt water and let it purculate until it´s done by tasteing to see if it´s cooked through, when done I strain off the excess water with a caldren, back in the pot and let it sit for 5 min. Simple.

Thanks for showing this easy method for making basmati rice! I have one question. When I put the rice back into the pot to let it steam a lot of rice stuck to the bottom of the pot. Did I make a mistake?

No, just add a lil butter before adding your rice to steam. That should help

Everytime I cook basmati I add about 1.5x the water and just let it boil and evaporate. It comes out nice, but a bit more like South East asian sticky rice. Will defo try this method today!

I’m going to give your method a try. I’ve been bringing to boil, covering with a lid, reducing heat for 10-15 minutes and it’s ok top layer but mushy under. I’ve been doing it with 1 cup rice 1 1/4 cup water.

Question: after you have boiled the rice for 4 minutes at #7 and then drained it, do you return the rice to the me-high heat pot or you lower the heat before putting the drained rice Thankk you

No I didn't. The cumin seeds when added alter the colour of the water.

Another landed here from Al's Kitchen (I think it's because there are so many that like the odd 'from scratch' or traditional curries that he also does from time to time - now my fav rather than BIR style btw...) Subbed you because you've got an infectious manner and passion for your recipes (love the way you often giggle when about to sample the fruits of your labour too, lol) Another important point that a lot miss out is, you make a point of always mentioning the heat number/setting at the various stages too. Got a lot to go through....so keep up the good work 😉👍
