Malaysians should be familiar with Ondeh-Ondeh, right? In this issue, I will make it into a cake, a small Ondeh-Ondeh cake with lava palm sugar filling. Pandan sponge cake is delicious with grated coconut and lava palm sugar. The sweetness has the salty taste of grated coconut, and the taste is very close to the Ondeh-Ondeh.
I have shared the detailed method of steamed pandan sponge cake before, and there are other flavors of steamed cake and tips as well, friends who are interested can check it out. The main point of this issue is to share production concepts and use old recipes to create new desserts. This time I used pandan extract to make the cake base. The color will be greener and the taste will be more fragrant. The cake base is the same as before, except that the portion is reduced and the mold is replaced with a small glass bowl.

The ingredients added this time is salted coconut shreds and lava palm sugar coconut. Adding some salt when frying the grated coconut will make it taste more Lemak flavor, and it can also neutralize the sweetness of the palm sugar so that it will have a richer taste when paired with it. When cooking the lava palm sugar, remember to pour the corn flour batter and stir well, otherwise it will clump.

- 2 Egg Yolks (1 egg with a shell about 65g)
- 45g Cake Flour
- 25g Pandan Extract
- 10g Milk Powder (can be omitted)
- 25g Corn Oil/Cooking Oil/Butter
Meringue
- 2 Egg White
- 20g Caster Sugar
- 0.25 tsp Lemon Juice/White Vinegar
Lava Palm Sugar
- 40g Palm Sugar
- 100g Water
- 5g Corn Starch
- 1 Pandan Leaf
Grated Coconut
- 30g Fresh Grated Coconut
- 0.5 tsp Salt

马来西亚人对Ondeh-Ondeh应该都不陌生吧?这期我要把它做成蛋糕,一款有流心椰糖馅的Ondeh-Ondeh小蛋糕。香兰海绵蛋糕搭配着椰丝和椰糖一起吃很好吃呢,香甜之中带着椰丝的咸味,味道很接Ondeh-Ondeh。
我之前分享过蒸香兰海绵蛋糕的详细做法了,还有其他口味的蒸蛋糕和心得,有兴趣的朋友可以去看看。这期主要的是分享制作概念,用旧食谱变出新的甜品。这次我用浓缩香兰汁来做蛋糕体
颜色会更绿,味道也更香。蛋糕体除了份量减少和将模具换成玻璃小碗之外,做法和食材都和之前的一样。

• 榴莲香兰奶油蛋糕,天然色素和味道的父亲节蛋糕...
这次增加的配料是炒香的咸椰丝和流心椰糖浆。炒椰丝的时候加点盐能让椰丝吃起来更有lemak的香味,而且也能中和椰糖的甜度,这样搭配着吃味道会更丰富。煮流心椰糖浆时要记得一边倒入玉米粉浆一边搅拌均匀,不然会结块哦。

Hi, did you leave a gap on the lid? This might caused by the heat was too high or there is too much water vapor inside the pot. So need to lower the heat or leave a bigger gap on the lid.

@@XiaoYen.AhSeng 我已经尝试用蒸香兰海绵蛋糕的视频(以50克香兰汁代替50克美禄水), 但是蒸出来的蛋糕是柔柔黏黏的(不成功), 很希望可以请妳帮忙研究(因美禄是小朋友的最爱)。 需要全蛋法是因鸡蛋还没有过期的前三周, 已经很难分离蛋黄和蛋白。

This is no baking powder and soda recipe for those who are sensitive to these ingredients. You can add it if you like. This version is a little bit difficult to sucess, the heat and water vapor are the key points.

可以用陶瓷或stainless steel或aluminum的。不过蒸的时间要稍微调整一下,因为stainless steel的受热比较快。

Hi, I loved watching the video for this and the cake looked so good I had to try it. However, mine failed big time, the cakes deflated as soon as i opened the wok cover and became very dense. More like a kuih bakar. The only difference with your recipe is that i used normal all-purpose flour, and not cake flour. And safflower oil instead of corn oil. Would you know what could be the cause? Can I add some baking powder to the flour so that it reacts with the vinegar to make the batter rise? I would love to attempt it again. Thanks!

这个食谱和造型我还没试过用烤的哦。不过我试过用玻璃碗来烤蛋糕冷了会塌陷。你可以试看用北海道蛋糕纸杯(内部没蜡没油纸)來烤。大约160度40分钟。

你好,因为每个锅子大小和器具不一,所以我只能用适量来说明。中火蒸20分钟大概需要1.5公升的水,要蒸1小时的话就大概需要3公升。
