Mysterious chemical changes color depending on perspective

Here is a crazy chemical that changes color depending on how it's viewed! I was first introduced to the effect when a friend showed me a hard to believe video that was posted by reddit user budget_cuts (thanks Zach for the tip!). In the video he shows a chemical that dramatically changes color depending on the perspective. He didn't say what chemical was used in the video, but I had to witness this effect in person, so I started reading and experimenting to try figuring it out.
original reddit post: / a_solution_we_made_in_...
The crazy effect is mainly due to a phenomenon called dichromatism that shows up in some substances where the color (hue) changes depending on the thickness or concentration of the solution. Surprisingly it wasn't untill 2007 that this effect was described in comprehensive scientific detail. (paper on the effect link.springer.com/article/10.... )

You can buy pumkin seed oil in Austria, it's kind of a local thing there. It's especially nice if you pour it onto some vanilla ice cream and the effects make it look a lot cooler. Edit: on wikipedia it said it's a national dish in a lot of former Austro-Hungarian countries, not only Austria, my apologies

You can get quite strong dichromatism from red to green by mixing blue and yellow food coloring at the right concentration. I noticed this sort of effect years back when I was a kid: it was with that brand of food coloring that came in four little droplet-shaped cointainers in blue, yellow, green and red... I wish I could remember the brand of food coloring though.

If I'm interpreting this correctly, this is similar to the phenomenon that makes the sky blue during the day and reddish at dawn and dusk, although I think it's due to scattering not absorption of light

What are common household products I can make a good "ionic liquid" from? (Oil soluble electric conductor and room temperature eucletic salt) I see a lot of ammonium salts and shampoos and such, some vitamins are close. I'm sure there must be be a household product pure enough. Looking at that indicator's structure looks like it could be close to a good anion.

Would the dichromatic effect persist if the volume were uniform throughout? For instance, if the liquid were in a container that's, say, 20cm³, would the color still change if the light were traveling the same distance to get through the liquid to our point of perspective? I'm not sure if I'm asking this correctly, but my thinking is that different amounts (wavelengths? I'm not very good at the terminology...) of light being absorbed or making it through to our eyes/to the camera is causing a shift in the color. Does any of what I'm saying make any sense?
