* Water : 80ml
* Dark soy sauce : 20ml
* Mirin (sweet cooking rice wine) : 20ml
* Bonito powder : 3g
* Rapeseed oil: 900ml
* Sesame oil: 30g
* Lard: 10g
* Potato starch : 100g
* Wheat flour : 100g
***Steps
1) Prepare the shrimps. 2) Make the tempura sauce.

***Points to remember
1. the thickness of the tempura flour and the way it is fried will produce a completely different tempura!
