Chinese chefs in Msia and Spore still have quite a way to go before being taken seriously. Premium dish doesn’t become such just because you stuff your food to the rafters with premium ingredients: there needs to be nuanced and suitable pairing with the rest of the ingredients, especially when you venture to try a variation on traditional dishes like Peking Duck etc. That huge slab of foie gras in a Peking Duck wrap is utterly grotesque, crude and disrespectful of the classic dish. 👎🏽👎🏽👎🏽
