FYI : Cendol is came from java island because the oldest script of cendol is on the book called Kakawin Khresnayana by mpu triguna on 14 CE as Javanese food for ceremony. I don't know how this food spread all over southeast Asia but I love that cendol becomes southeast asian heritage Btw, in Javanese culture this typically food has three different version and name 1. Cendol (made with any starch like mungbean starch, sagoo,tapioca,cornstarch, Little bit chewy) 2. Dhawet (made with Rice flour so the texture is smoother like Malaysian or Singaporean version) 3. Godher (made with fresh seaweed combine with tapioca, It is really chewy like thai version) So the real name of this food is DAWET, Cendol actually is nickname of dawet that has little bit kind of jelly chewy texture (The word Cendol is came from Javanese "jendol" mean swollen). Some people make Cendol dawet or dawet goder by mixing two types of flour together. This food has three color green, pink, or black. We usually serve this with ice block, Coconut milk, palm sugar pandan syrup,jackfruit, and fermented sticky rice

In my home town, we do not use pandan leaves to make the cendol dough green, we use suji leaves instead. Physically suji leaves are very similar to pandan leaves but less aromatic. It gives thicker green color as well.

In Madurai, Tamilnadu, South India,they make Jigir tanda,in North we make Falooda, we use vermicelli instead of cindel...we use Rose syrup instead of Pandan leaves...

We make cendol with natural food coloring of butterflypea flower. It becomes blue cendol. We plant the blue flower and produce blue tea for drink. Thank you to promote cendol. We use arrowroot flour for the ingredients. Salam from Majenang Indonesia.
