Is there anything nicer than catching up with old friends? When Greg catches up with his old friends, they have to do something extra special, in this case… Naan Bread!
Baker's flour - 425g
Bicarb soda - Pinch
Salt - 7g
Years - 21g
Water - 268ml
Place all ingredients in a stand mixer with a dough hook attachment and mix for about 6 minutes.
Stop the mixer and check that the dough has formed a ball, that it’s smooth with no lumps.
Cover and leave in a warm spot to double in size for 1 hour.
Divide the dough into 9 x 80g pieces and rest for 10 minutes.
Roll the dough out to 3-5mm thick and rest for a final 15 minutes.
Cook straight on top of your ESSE hot plate / close the bolster lid to trap in the steam... this is fast, so keep an eye on it!
