Ingredients:
Boiled and deshelled egg - 5
Onion - 3 big (Thinly sliced)
Ginger - 1 big piece (Crushed)
Green chilly - As per taste
Tomato - Half of a small one
Thick coconut milk
Turmeric powder - ½ tsp
Coriander powder - 1½ tbsp
Red chilly powder - As per taste
Garam masala - 1 tbsp
Mustard seeds
Curry leaves
Coconut oil
Salt
Steps:
Heat oil in a pan.
Splutter mustard seeds.
Add onion, ginger and green chilly.
When the onion becomes soft, lower the flame and add turmeric powder.
Add coriander powder, followed by red chilly powder.
Once the raw smell of masala powders is gone, add tomato and salt.
Add half of the garam masala.
Cover and cook on low flame til the tomato is done.
Add coconut milk and increase the flame.
Adjust the salt. Bring it to a boil.
Add remaining garam masala and boiled eggs.
Let it cook on medium flame. Bring it to a boil and switch off after 2 minutes.
Enjoy the Kerala Style Egg Curry with appam or velleppam.
