Ingredients:
Potato - 3 big (Cut into medium sized pieces)
Egg - 3
Milk of 1 coconut (Thin and thick)
Shallots - 5 / Onion - 1 medium (Sliced)
Green chillies (Slit open)
Ginger - 1 piece (Crushed)
Curry leaves
Turmeric powder - 1¼ tsp
Coriander powder - 3 tsp
Red chilly powder - 3 tsp
Garam masala - ¼ tbsp
Vinegar - 1 tbsp
Onion chopped
Dry chillies
Curry leaves
Turmeric powder
Steps:
Pressure cook eggs adding 1 cup water for 1 whistle on high flame.
Let the pressure release naturally.
Remove the eggs and let it cool.
Heat coconut oil in a claypot.
Add onion, ginger, green chillies and curry leaves.
Once the onion turns golden, lower the flame and add turmeric powder.
Sauté till the raw smell goes away.
Add coriander powder and sauté till the raw smell goes away.
Add red chilly powder and sauté till the raw smell goes away.
Add thin coconut milk, potato and salt.
Cook covered till potato is cooked stirring occasionally.
Once it is cooked, add garam masala and mix well.
Add vinegar and mix well.
Add thick coconut milk and let it boil. Turn off fire.
Add eggs cut into half.
Heat coconut oil in a pan and add dry chillies, onion and curry leaves.
Once the onion changes its colour, add a little turmeric powder and fry.
Switch off and add this to the curry.
Leave it covered for a minute.
Enjoy the egg curry.
