In 2022 I attempted to clone Sierra Nevada's Celebration IPA, and although it was very close, there was some differences! in this video, I am on a mission to perfect the beer... how did I do? Check out this grain to glass video and see!

Sierra Nevada Celebration IPA Recipe:
Grains:
2-Row Malt 12.0 lbs. (85.7%)
Caramel 60L Malt 1.5 lbs. (10.7%)
Carapils (Dextrine Malt) 0.5 lbs. (3.6%)
Mash Temp: 150F
Hops:
Chinoook 1 oz. 60 mins
Centennial 1 oz. 30 mins
Cascade 1 oz. Whirlpool 170F 10 mins
Centennial 1 oz. Whirlpool 170F 10 mins
Cascade 1 oz. Dry Hop 7 days (after fermentation)
Centennial 1.5 oz. Dry Hop 7 days (after fermentation)
Whirlfloc Tablet (optional) 1 tablet 15 mins
Yeast:
Omega - West Coast Ale I - OYL 004
OG - 1.065
FG - 1.013
ABV 6.9%
SRM 11.8
IBU 70.0d
Mash pH 5.3
Efficiency 70%

So confused on lower mash temperature causing it to be drier….my club said same thing about my Vienna Lager being a little on the sweet side…. It counter intuitive that MORE sugar makes the final drier. Great overview and tweaking of a recipe!

Warmer mash temps create more unfermentable sugars. This is why higher mash temps produce sweeter, fuller bodied beers. Lower mash temp causes beer to be drier. Look up alpha and beta amylase if you don’t understand this concept. Also warmer mash temperature does not make it more sugar. I think you’re conflating efficiency with conversion

The comment above is correct. Warmer mash temps create unfermentable sugars. Lower mash temperatures create sugars that the yeast can consume and therefore convert into alcohol and not add sweetness to your beer. The high temps will leave those sugars, it will have a full/thicker mouth feel and more malty sweeter flavor because the yeast can't consume those sugars.

One of my favorite iPa. SN uses all loose leaf hops. That may be where they get that punch of aroma. May want to whirlpool in some cones at 0 minute . I will load your recipe and give it a shot.

Looks great. Wish I could find SN Celebration in Norway. Perhaps just try making it myself. PS. The original looks a hint darker on the video, but that could be the light and background.

Definitely make it! The color is almost identical, the lighting does matter, because I thought the same thing when my beer was on the other side too.

I like it. It's like an Amber version of an IPA. Little more malt but still got the bite and bitterness I like

Took the recipe, Centennial is my favorite beer as well, and I never found it this year 😫😫. I will be tweaking this for my 1 gallon system.

That was a lot of changes to OG recipe couldn't that have made it hard to nail what got you exactly where you are now

I think all of those things had an impact, but I knew I needed to do more than one thing. If I had to guess the biggest impact was the mash temp lowered and the IBUs increased slightly. The yeast would also have some impact, but I think less than the other two

Couldn’t you just recover the yeast from the 6 pack and build up a starter to get closer to replicating? I thought Sierra Nevada was unfiltered.

Yes, I've harvested the yeast from Bells before. I wasn't 100% sure about Sierra Nevada... But I think you're right. My next Brew Day video I will be doing that with the bells hazy-hearted IPA. Keep on the lookout for that.

Imperial sells Bell's house yeast I think (A65?), so that might make it easier.

Yes it is Imperial A62 and you need to buy it from bells website store. They don't sell it anywhere else

@@CityscapeBrewing Well that sucks. I understand why, but still sucks. I thought you could buy it anywhere Imperial is sold. Good excuse to get the real thing if you have to harvest from some bottles.

Yep! I've done that a bunch of times. When you can harvest the yeast, it's essentially Buy a six pack and get a free yeast! Lol
