I have been watching these Yatai videos for the last few days, amazing the amount of work goes into the set up and managing it, although I have to say this with love... why do these kiosk booths all look depressing? Like, slap a coat of paint on the boards, or the poles, sand them and put new stain/varnish on them. Or the white backdrop the bottoms are all dirty/chipped... the amount of physical labor going into all the setting up is just mind blowing, I couldn't do it, wear me out to much. 👏👏
Jobsworths in the UK would have a field day with this guy

Not as hygienic as some of the other ones I have watched, gloves when handling raw meat and seafood might be a good start. How did he was his hands after erecting his stand or handling food?
