INGREDIENTS:
6 cups = 930g Bread flour
1/2 cup = 70g granulated sugar
1&1/2 tbsp = 12g dry active yeast
1 teaspoon of salt
1 stick = 113.4g of butter (unsalted)
1 egg
1/2 tsp nutmeg
2 cup of water
1/4 teaspoon of vanilla extract
1/2 cup = 120ml evaporated milk

Butter bread, AKA Agege bread, is a popular bakery item in Ghana and west Africa. It is lived for its chewy, fluffy, light, airy and delicate texture. It is mostly enjoyed with a variety of breakfast beverage and porridge.
In this video, I use a high protein content flour to attain a considerably higher rise that does not require multiple proofing, as is the case in the original preparation in Ghana.
Bread flour becomes the star component in this recipe, and although the outcome of the final product has subtle differences in texture, compared to my previous recipe using all purpose flour, the actual preparation differs significantly in duration and technique.
Attention to detail in a more step by step approach for easy, replication of this Ghanaian classic.
Please be mindful that temperatures vary from location to location and may directly influence the length of time it takes for your dough to rise, so monitoring the dough during the proofing/ rising process is key. Also, ensure that all wet ingredients are at room temperature for your butter bread baking adventure! Enjoy 😊
Recipe instructions:
Combine flour, sugar, salt, yeast, nutmeg and stir to combine. Set aside.
Then combine milk, egg, vanilla extract and water and slowly pour into mixing bowl containing dry ingredients. Mix for 3 minutes till dough is formed and add butter in small amounts till completely incorporated.
Knead dough for an additional 3-4 mins till dough begins to resist kneading. Shape dough to a round smooth ball and cover with a damp clean towel, let rest for 10 minutes.
Form dough to a log shape and place in greased floured baking pan. *please note that you may bake in any loaf pan readily accessible to you and feel free to split dough into 2 equal parts to fit into two regular size loaf pans ** Proof in a warm environment for 45 minutes or until dough rises to double its original size. Must have at least 1 inch of free space at top of baking pan prior to baking. Preheat oven at 325 degrees Fahrenheit and bake at same temperature for 1 hour.

This bread is just like the Bread we do in Jamaica called hard dough bread the texture is the same, so yes as a Jamaican I will make this bread ,normally we Island folks go to Caribbean store to buy and of course it is mass produce, so thank you Nanaaba glad I run across your channel

I am happy that I came across your channel. I am a baker by trade and in school they do not teach about African Bread. I am Black American but my ex husband is Nigerian. We have 2 children and I know the importance of culture and wanted to introduce them to Agege Bread. Their dad cooked different kinds of Nigerian foods for them but not bread. I thank you for your detailed instructions. I cant wait to replicate your recipe. You obviously know your craft. Thank u again. If I can make all kinds of Italian, French, Jewish Breads etc, I am a Damn Fool not to make a Bread from Nigeria and I have Nigerian Children. Thank you! Your recipe is correct. My butter Bread came out moist, fluffy, great crust! And I used Cardamom for my spice. I made a butter Bread from a recipe from a different channel. It came out awful. It was dense, extremely dry. She used a total of 7.5 cups of flour. I felt it was wrong as I mixed it. Kneading the dough was a horrible chore. I knew the bread would turn out BAD, just from the feel of the dough. And it did. So.....THANK YOU for a great recipe! I have learned, that bread making is a Art! And it is! God bless you in all your future endeavors!

Awesome presentation, Nanaaba's kitchen! I love that the kneading at max is only 4 minutes. The grocery shops are out of bread flour . The have only self raising and plain flour in stock. Very well detailed video.Thx for the tip about not double rising, I made some sugar bread recently using using bread flour but bc I let it double rise it rose too much for my liking in the oven , it came out good but it was just too much of a rise . I made this on thanksgiving! My first time making loaf bread and my first nanaaba recipe. I shared with friends and family and it made me happy that they enjoyed. I saved four slices especially for myself for leftover turkey sandwiches. I can’t wait to get some better pans and make it again! Thank you. I checked the link you provided for your pan and they are out of the size. Will two of the 450s work or will the dough touch the lid? Other options are 250g and 750g. Or is there another brand you recommend for this recipe? Thanks again and happy holidays. Oh ps really glad you redid the video. This was so easy and very special. I still made mistakes and still had to make adjustments but it also still came out nice and yummy. I feel confident to try other breads now. I have friends who have burger night every week so I’ll have to try your brioche buns for them. Besides that Which of your breads would you suggest a beginner tries next?

You may split up the dough to fit in 2 smaller pans as I don’t know of any other bread pans to recommend at this time. Please try the tea bread recipe next. 🙏🏼💕

It turned out amazing! Though I used same pan measurements as yours I ended up with excess dough so I made another smaller loaf as well. Thanks for sharing your knowledge and recipes! God bless

I love breads. I make homemade oinion rolls. I also make datenut bread and raisin cinnamon bread. Thank you for sharing your recipe . I always perfer homemade . Your bread came out very good and double thanks for the tip on the bread mold. I dont have one that one looks well worth the investment. I love CRUSTY chewy hot bread with sweet butter 😋.

I tried your recipe using the loaf pan and I guess the mixture was abit more for my pan size and also though I put water in the pan so the steam helps to rise it still burn and I baked it for 20mins yet it burnt..all in all I got the concept...and the kids will enjoy it at breakfast.

Also I realised that adding the 2 cups of water to the milk mixture made it abit soggy so I had to add ¾cup of extra bread flour to stiffen it.

Hi Evelyn, The loaf pan I use in the video is a 1000 g loaf pan size. If your pen is smaller than you must split up the dough, or better still, split up the measurements. If your measurements are accurate as shown in the video, your dough should not become soggy.

Lovely bread. Tried it today, so yummy. The crust came out a bit hard and too brown as well. I proofed twice, the dough puffed out a bit. Will try one proof next time.

I want to try this recipe. But I have rapid rising yeast. Was even lucky to have it because there is no yeast in the whole America. How do I substitute rapid rising yeast for active dry yeast

i love how you explain your recipes, it makes baking easy. can i use butter margarine(SIMAC) for the bread, this is what we use here in Nigeria especially for cakes. so can i use it for bread? or does it have to be another kind of butter.
