in my first apartment our table was the coffee table which became my baking table after covering with wax paper. in the 70’s we didn’t have all the luxuries of today. Our luxury was our hands. no pie tastes better unless the crust is by hand. eons ago we made food with the love of our fingertips

When people refer so lovingly to food made in authentic Tuscan kitchens, it is not these huge commercial kitchens in McMansions, it is small kitchens in Tuscan farmhouses that may have needed water brought in from a well. On my grandparents farm, my grandmother made biscuits for the big farm breakfast so effortlessly by hand on the kitchen table. I still have that table, which I use as a desk, and love seeing the marks where she attached her meat grinder to grind her own beef. The best meals are those prepared with love, not fancy kitchens.

same with my mom. it's all about hydration. i failed a few times because i did not add enough water. 2 tablespoons might not be enough. when i rolled the dough out, it started crackling and breaking apart. likely because i was using freshly milled flour.

Me too! My mom was the best pie maker. She was also a Crisco gal! Her crust was delicious. I could not make that pie crust. I bought so many gadgets to assist me in moving the dough to the pie pan! That ended up as a failure! Using butter rather than Crisco turned into the same failure for me. I decided to put away the gadgets and buy my pie at a grocery store when needed. After reading the comments, I think I am going to give it a shot!

Im going to make butter tarts for my wonderful and kind son-in-law's birthday. It wasnt your recipe in particular that boosted my confidence it was you saying " its not perfectly round and its not going to be" and " we can fix that" when you patched in some dough on the lip of the crust.Youve got my back! I've never seen a pie crust made with oil instead of shortening or lard -- but you made this look so fast and easy -- I think I'll try it!
@KFCalif
@KFCalif 4 жыл бұрын
I came here from Reddit, the other day, based on a prompt by Paige. Nana Gloria -- I'm so surprised at how my pie crust turned out! I am not a frequent pie baker, mostly because I have a tiny kitchen with poor counter space. I make quiche quite often, not so much fruit pie, and I always grab a crust from the freezer. But you said by the time you open that box of frozen pie crust you could make this simple version -- and -- you had one other trick. I detest using my ONLY counter to dust with flour, it's so messy, and my dining room table is quite nice, so that's not a good surface for me. Dusting and rolling out in flour is a pain in the butt -- but you used wax paper and it was so neat and tidy. So today for lunch I made a bean and beef savory pie, and I used your crust. It's very good! The texture of the crust is unique -- it's almost like a cross between flaky and a very fine crumbed shortbread cookie. I think next time I'll add garlic salt when making something savory. But -- you were right. The crust was the LEAST labor intensive part of this savory pie entree, and I'll make your crust again and not waste 2 seconds worrying about it! The big test is making a fruit pie, however, because I so detest a soggy bottom crust from liquid fruit juice. Perhaps blind bake that one first, and then rebake with the filling?
@2244ntho66
@2244ntho66 4 жыл бұрын
@@KFCalif Blind baking will 'toughen" up the crust so it won't get soggy. I, too, was surprised about the oil, I have never used, just shortening or butter. And alternating with vodka and water for the moisture. Wax paper will help in getting the crust into the pan, I don't know how anyone does it any other way! But working the dough too much and not prepping the crust per the recipe will always be a disappointment. Good luck!

I loved this easy to learn, straight forward instructions given by this cute Nana!! Thank you so much. I needed a quick crust for Thanksgiving. I prefer it to be homemade but I have not made one in a very long time and forgot how it is done. This is done to perfection. I miss my granny who died when she was 99.5 years young. I always loved watching her cook and bake homemade receipes. Since she has gone home to be with the Lord, none of the children documented the receipes, we wish we had now. I remember some things, but having the actual ingredients are key. Thank God for these smart grandchildren who decided to film these wonderful keepsake receipes. Thank you for sharing them with the world. God bless you and your family, Jesus name, from my family to yours!!! I look forward to viewing many more.

This is the only pie crust I have ever made in 55 years of baking. The reason? It tastes good! For me, other crusts just don't have any flavor. Eating pie is all about the crust. Plus, it's so easy and fool proof. I never chill it before rolling. Makes a delish quiche crust, pot pies, etc. I used to roll out the scraps and sprinkle with sugar and cinnamon and bake for my daughter. Yum!

You are a natural at this. I could NEVER make pie crust until I made it the way you make it. I was looking for a you tube tutorial for pie crust and found you. This is by far the easiest pie crust I have ever tried to make. And believe me, I tried and tried to make pie crust only to fail over and over. Thank you so much for giving me back my self esteem where pie crust is concerned. You're the best.

Nana.....Take a bow, I watched your video several times, i finally tried your recipe. Well friday, i made 4, and i just finished two more. Took the 4 to church and they were in live with the crust. Thank you sooooo much. Oh, by the way, last night, I changed the 2 tablespoon to 1/2 cup, added just a little more oil, a tab bit more of water, and that took care of it sticking to the paper, and perfect size to fit the pan

Some of my favorite memories from childhood are the "Pie Baking" days with mom. I knew the moment the kitchen table was placed in the middle of the room and the extensions were in place that a few hours of dough fun were in the offing. I stood transfixed as her beautiful hands deftly mixed the flour, shortening and cold water. If sis was around at the same time we were both given the extra dough to turn into what we called " bumble bees" with cinnamon and sugar . A real treat! I have never learned to make pie dough like she did but I did find a recipe that even I can't mess up. Thanks to you for sharing your tips and to your grandkids for making you a real star...Now if I could only make noodles like Grandma Ellie did! Nana, YOU ROCK!!

Great content Nana-as a 30 yo father who’s the primary cook in our household, the best instructions come from parents and grandparents who have years of experience cooking for their families, because there’s always a strong element of practicality. I just discovered Nana’s Cookery and I made this pastry this morning for an open face apple galette. I mixed up the crust in a jiffy and it was so easy to roll out, didn’t have to fight with the dough like with other pastry recipes. It baked into a beautifully flaky & delicious crust. This is my new go to crust. No more fussing with cold butter or lard and getting frustrated with the dough tearing during rolling! Thanks, Nana!
