When putting in new tube try inflating it a bit. It will make easier to put the tire on. And yeah special plastic tools are meant for taking off the tire without damaging the rim.

If you haven't, check if the disc is bending while you're braking, if it is, try adjusting the position of the brake pads so they don't bend the disc, I'm 99% sure that's what's causing the squeaking
