Nargie's Mongolian Cuisine: AIRAG - KUMIS (Mongolian Fermented Mare's Milk)

Every winter, Americans enjoy some puny Budweiser Clydesdales horses slip about in snowflakes carrying some wimpy beer. This is a pretty neat trick from peasants in a young empire like the United States. Good job, guys!
But in Mongolia... During the dead of winter, whilst taking a break from hunting WOLVES with EAGLES (or sitting at home listening to The Red Hot Chili Peppers), dudes like Nargie chug airag. What is airag? Well, the warrior-lady princess horses, aka the mares, produce milk, which is fermented into a delicious and strong alcoholic drink. It's STRONGER horses making STRONGER drinks in COLDER winter for COOLER dudes like Nargie. Keep Mongolia Great!

I miss my times in Mongolia. When i first tried airag, I was like, "What am I getting myself into? This is the most weirdest thing I've ever had!" My first sip, it was like a spoiled milk that was sitting in the fridge a week too long. But then it had this odd sweet after taste. I thought I was done, but I couldn't stop drinking it. It became oddly satisfying to drink! God willing, I will be back in this beautiful nation!

Ayiraag means to "Separate" in Old Turkic (and in the modern day they drink ayran a yogurt watery drink with salt, they still have ayirag but they more often drink Raki which is Arak, in the steppes Araki from Ayirag, but combined maybe with raks [grape in Greek] which is why Raki is made with grapes but sometimes called "lion's milk", a heavier alcoholic content than Ayraag), in Mongolian spelled ääryg. Some Mongolians say tsegee, which may have something to do with Skyr in Iceland.

Kımız is traditional drinks of Turks. Even protoTurks drunk it. Kımız is also part of Turkish oath ceremony. If you split your blood into bowl which full of kımız, you can make an important agreements. But you have to drink it. That bowl is ant kadehi. Todays we still use it for oath we say '' Ant içerim'' Also we have special letter for it. Orkhon- Gokturk alphabet has Ant letter. Shape of letter shows the bowl with blood.
