Neera, also called palm nectar, is a common drink which is extracted from the inflorescence of various species of toddy palms. Especially the sap is extracted. The extraction of neera is usually performed before sunrise. It is translucent in colour and sweet in taste. It is susceptible to natural fermentation at ambient temparature within few hours of extraction. In India, Sri Lanka, Africa, Malaysia, Indonesia, Thailand and Myanmar, Neera is widely consumed. Neera is rich in carbohydrate especially sucrose and has a neutral pH. The chemical percentage composition of neera varies depending on such factors as place, type of palm, mode and season of collection. Neera is a non-alcoholic drink produced by tapping various kind of palms. In here an incision is made on the spathes of the palm and the liquid that oozes out is collected in earthenware pots overnight. After the collection, it is filtered in order to get rid of foreign particles. Then it is pasteurized, chilled and stored at cool temparature. The shelf life of neera at room temparature is only about 2 months but while under refrigerated conditions it can be keep for about 4 to 6 months. Neera is widely used to make some products such as jaggery, sweetners, concentrated syrup etc... Neera is both delicious and also a nutritious drink. It is rich in vitamins and minerals such as calcium, zinc, iron, potassium, and phosphorus. Neera keeps our body hydrated. A team of experts from SCMS Institute of Biosciences and Biotechnolgy, Cochin, India have successfully developed filtration and preservation techniques of neera and collaborated with Coconut Development Board to commercialise the drink among the public. According to Ayurveda, neera syrup is used as a health drink. In Kerala, the State Government as part of Kerala Vision 2010, setup 3 units to manufacture neera. The Coconut Technolgy Mission will provide the technical know how to procure, process, and pack neera. The Government will give 50% subsidy and the rest 50% have to be financed by entreprenuers. From one coconut tree, 1 litre of neera can be extracted. Other value added products like ice creams, biscuits, and toffees can be made from neera.
