Madam,....some points to be followed.....dough is not kneaded thoroughly...it is just roughly mixed and ....DO NOT KEEP IT TO REST OTHERWISE GLUTEN WILL MAKE IT SOFT AND SMOOTH...AND KOKI WILL NOT BE FLAKY......SO IMPORTANT THING IS.... JUST MIX THE INGREDIENTS ROUGHLY AND IMMEDIATELY MAKE THE BALLS .. THEN JUST KEEP IT ON TAWA JUST WARM FOR FEW SECONDSI ON BOTH SIDES THEN KEEP IT ON BOARD AND START ROLLING IT... LET IT BE THICK....THEN COOK IT ON TAWA PROPERLY ON MEDIUM HEAT VERY PATIENTLY......

Sharing a tip - add salt and all the masala to finely chopped onion, it'll release some water and then knead the dough with that, add some water only if required. It tastes much better like that. Do give it a try.
