In Kenya corn is known as maize but our local swahili 'mahindi' ..when its roasted we call it 'mahindi choma' and when its boiled we call it 'mahindi chemsha or boil' . We also use corn to prepare our favourite cheap food known as 'githeri' a mixture of corn and beans boiled and fried. Corn flour is now our staple food known as 'ugali' flour mixed with water and left to cook under slow heat untill hardned
