Great video! I have a FD and a dehydrator and can and freeze things. With cilantro, kale and other greens, if Infreeze them I like them up and roll tightly into a “cigar”. Then I wrap in waxed paper and throw into a freezer bag. When I need it, I open the waxed paper and just cut off of the cigar. Tastes like fresh, with the frozen consistency. Just an easy way to store it in a hurry but it totally works.

I so appreciate that you compare the methods. Hesitate to invest in a freeze-dryer just yet; dehydrators are much better than they used to be, and very affordable. Vacuum-Sealing usually skipped over, but I think it's great. Can see demonstrated which method makes the most sense for what. Thx.

I will add that freshly grown cilantro turns out better dehydrated than store bought. Like any herbs! Picked early in the morning and straight to the dehydrator. I’m in the high desert of Texas. It’s HOT! I need to get my fall cilantro planted.

Yep - I know there are a lot of nay-sayers, but it's because they want fresh, and it's never going to be fresh, and people tend to dry it too hot. We're not even going to bother with a fall crop now. It's been so hot we're concentrating only on a few heartier herbs for the season. This heat has really done a number on the garden this year!

I buy a case of cilantro and dehydrate it, it takes me three days to process my cilantro. I do not wash my cilantro until i hand sort the leaves from the stems and when it is ready to dehydrate, i wash my cilantro and run in the salad spinner and fill my trays to dehydrate. I love cilantro in my soup, meals etc.

I love your video especially comparing dehydrator and freeze-dryer. It is very interesting that you go on one item at a time, this time cilantro, last time, tomatoes. I can’t eat fresh cilantro, don’t know why, but I use a lot of coriander… if you powder DH cilantro, is this close to coriander… or is coriander powdered seeds… can’t remember. So if I like coriander, should I just buy it? Thank you in advance!
@ThePurposefulPantry Жыл бұрын
Coriander and cilantro are the same thing. HOWEVER, in the states, we label coriander as the seed/seed powder. In the UK, elsewhere, coriander usually describes all versions of the plant - green to seed.

I have a question about dehydrated bell pepper. I dehydrated bell peppers one year ago and once conditioned stored in a mason jar with a Dessicant pack and 02 absorber. The jar is still sealed. Are these peppers still safe to eat?
@ThePurposefulPantry Жыл бұрын
Why would you think they wouldn't be? You don't need both (in fact I recommend that you don't use both because an O2 absorber needs a little moisture to work properly - and you're just wasting resources.). Dehydrated foods easily last 18 mos - 2 years. You're fine.

Question: I have tried to dehydrate basil at 95° and it takes days and days. When I increase the temp to 110° the leaves will crumble in 24 hours. Is there a reason for the 95° temp? Is it for safety or to preserve the flavor? I just want to dehydrate the right way!

Preserve nutrients and flavor - You're going to be fine if you bump it a little. Some herbs just don't work well with heat, which is why that recommendation. Your experimentation about what works best for you is what you need to work from ;)

As long as you dry everything properly - there's no reason to worry about it like with canning. It's not really an issue with dehydrating.
