OK, we've made these buns four times now and our carnivore life has had new life breathed into it! Thank you guys! One question - we would love to figure out the trick to make the buns fuller, we usually end up with the buns being on the thin side. But, the really fantastic news is the buns taste really good and you can make your favorite burger and the bun does NOT pack a big insulin spike. Thank you so much Chris! Keep up the awesome work - we have also made your pizza crust twice and it is jut as amazing as these hamburger buns!

So glad you enjoy them! If you want to keep them puffier you’ll want to play with the amount of egg white powder. Humidity and temperature as well as your oven and the water content in your ingredients can all affect the outcome so you’ll have to play around to find the right balance for you. One of the reasons baking can be so frustrating is all the variables that can affect the outcome without warning.

@@ChrisCookingNashville Chris, I read through the rest of the comments here and it looks like there are several variables we could try: 1) Add more egg white powder to the recipe 2) Add the egg white powder to the whipped egg white bowl instead of the egg yolk bowl 3) Increase the oven temperature a little 4) Leave in the oven a little bit longer 5) Don't crack the oven door quite as much. Which one would you try first? We certainly don't want to try all at once, but I'm a guy and if my wife wasn't watching me that would be my 1st instinct! LOL PS - we are at high altitude in CO so I think that makes a difference too.

Haha I hear ya. I’d add an extra Tbsp of egg white powder (specifically add it to the liquid egg whites and then whip while adding the other egg white powder to yolk mix as normal) and also crack the oven door less. Start there first. If you find them too spongy/foamy you’ll know it was too much egg white powder and you can go back the other direction slightly and start playing with other variables. 😊👍🏼

I tried this and I have to say I’m impressed. This is by far the best I have come across. I didn’t have a hamburger mold, but I did have a muffin top mold, so I just used two instead of cutting them in half. I also topped mine with everything bagel seasoning and it was delicious!

I had kinda given up on a burger bun I could actually enjoy (usually had something like flax seed (yuck, tastes like what I think dirty sock water would taste like) or some other crazy ingredient. If you melt coconutoil and mix in baking soda, then freeze it. You can grate the solidified mixture and add it to the batter. The heat will dissolve the oil, and the baking soda will react with the moisture around it a bit later, causing it to puff up before it has time to escape the batter. I haven't tried it with this recipe, but it might work.

I would TOTALLY love to see your method for burger patties when you can't cook out...currently I'm caring for my 90+ YO in-laws in a 55+ apartment community, and only gas grills are available here. Which I'll learn to use and may be great, but I sure miss my charcoal grill that I have been known to use in pretty much any weather when I have access. This only happens very rarely anymore.

Hey no worries! Just means you need more egg white prefer to stabilize them more. It’s a balance to have enough so it doesn’t fall but not so much it becomes dry and like memory foam. Just add an extra Tbsp with the egg whites when whipping and that should fix it. If not you can use more. Or if that becomes too foamy use less. 😊👍🏼

Did you know, since you are including it anyway, if you add a small amount of white vinegar to the egg whites, they will stiffen even better than just whisking it alone? If you ever make the meringue part of a pavlova (a traditional Christmas dessert for New Zealand and Australians) the little bit of vinegar is crucial.

Vinegar can definitely help stabilize the whites, but in this recipe the baking soda is being added to the whites so it can react with the vinegar when folding it into the yolks. To add vinegar to the whites would cause this reaction to happen too early and would cause a premature puff in the whites which would cause it to fall flatter in the oven. It’s a great technique for other recipes but I wouldn’t recommend it on this one.

Yum a pavlova! I make that with my organic berries! I actually wipe the whisk & bowl with vinegar and no worries if a little is left in the bowl for most egg white whipping recipes… the baking soda being added later in this particular recipe, right before baking is crucial timing though. Many American recipes normally use Cream of Tartar or Lemon Juice ( or White Vinegar ) for the stabilizer. Chemistry in baking is fun to play around with. 🤓 That is why I enjoy Chris’ videos so much!

I admire your tenacity to create a carnivore world to replace the pitfalls of eating. I tend to avoid disguised alternatives in the same way I tend to avoid similar plant based protein alternatives. I seem to be the most satisfied on meat and natural fat on the meat. The one odd thing I notice about most carnivore eaters is they don't tend to exercise very much. Sometimes the simple things satisfy me most...I've only been on carnivore for 3 weeks and eat about 5 eggs and about 1 lb. of meat per day. I have been swimming 1 mile per day, 5 days a week. I take off on weekends. That said, I love watching your wife test your recipes, my wife hates my cooking...LOL

Failed x2. They fall even with turning off the oven and leaving the door cracked. So sad because I tried twice and used so many ingredients. But I still ate them. I just wish they would not fall

This means you need more egg white powder because the protein structure isn’t strong enough to hold them up.

These buns tasted sweet to me and deflated down too much for my taste. Made them again and added 1/4 tsp onion and 1/4 tsp garlic powder, plus 2 Tbs egg yolk powder to the yolk mixture per an Indigo Nili bread recipe, as a test. I used the toasted gelatin instead of plain, and added both cream of tartar (it's damp here which can cause problems with egg whites standing up) and baking soda to the whites, then baked one in a parchment lined 4" metal pan and the other in silicone. The metal pan baked bun stood up a lot higher and hardly deflated but took about an extra 5 minutes to bake.

Can do! You would likely get a more dense texture from this with meat flour, but if you’re looking for a denser bread that would be a good addition. A few Tbsp would be enough probably. 😊👍🏼

I haven’t myself and I haven’t heard of others. I intend to experiment for sure. It’s going to require a reduction in temp and and increase in time, but I’m not sure yet where that will end up.

Just made some yesterday. They taste great. I think the cooling phase is very important. Apparently "1 to 2 inches" depends on your oven. I will try again with a smaller gap to prevent cave ins. Amazing Yorkshire Puddings for shredded beef and gravy! Thanks for the great recipes!

Thanks so much! Yes it can take some playing around with your gear and also the amount of egg white powder. The frustrating thing about baking is 100 different variables can affect it without earning (humidity where you are, temperature, elevation, your oven, your eggs, all sorts of things). With some tweaking you’ll find the best way for your specific circumstances. 😊👍🏼

Hope you enjoy! If they fall (or you’re concerned they might) you can add 1 extra Tbsp of egg white powder by adding it in with the liquid whites before whipping them. You can also increase the baking time by 3-5 minutes to help with that too. 😊👍🏼

Hello! I hope you enjoy these. Yes, add 1/2 tsp of egg white powder to your liquid egg whites and really make sure there’s no yolk anywhere near them (even the tiniest drop will ruin the whipping). Wipe the bowl down with vinegar and dry it out really well. Also you can add 1/4 tsp of cream of tartar to the egg whites as well to help them whip up. 😊👍🏼

Made this. Thank you! As a celiac AND carnivore I tore up these buns like I had never had a bun in my life. How I miss a bun for my burger but not anymore! I think I overfolded at the last step so the bun wasn’t as Fluffy as yours , but I just used 2 pieces as a top and bottom. Totally hit the spot! Woot woot! !! 🍔 I can see it being worth taking an afternoon to make a huge batch and use all summer long provided they freeze well. I think I shall try to freeze one and report back!

Sounds great! Yes maybe a little over folding or even slightly over whipped whites but not problem. You can also add another Tbsp of egg white powder (add to the liquid egg whites before whipping) and that will stabilize them more too. 😊👍🏼

Wondering if you were able to freeze these I am one person on Carnivore in my house, the Hubby eats a SAD diet and while supportive will not even try these substitutions. Because of that some of the recipes are too big for just me and the ingredients pricy to waste. (I have tossed more egg white bread then I can count).

Bought the silicone pans, made the buns! These are awesome 🎉. For my oven, I probably needed to bake one or two more minutes. I took one of the buns and made it into garlic bread. Amazing!!
