Try changing the fbx format to an older version. I have experienced the bug you mentioned and that seems to fix it.

HI Abe, I have a question, i'm a student and i'm doing a character for my final prject school, i'm wondering if i should retopo quadro the whole character? or can I retopo it (except face and hands) with zremesher?

It depends a lot on the character, send me some images on discord and I can give you a more precise answer. However ideally yes retopoing everything will give you more control and a better result

Yes of course , the setup might be slightly different but the principles are exactly the same. In chapter 5 I also cover the blender setup for the final textures
