I am a full blooded Cajun and I want tell you that my family did not cook with tons of pepper. I am pretty sure that when Louisiana became a tourist attraction, is when it started. Yes, some like tons of pepper, but you would be surprised that most would rather just have enough to flavor but not burn going down. Lol When we talk seasoning, we mean exactly what you do. Salt, a little pepper, tons of garlic etc. we hate bland food. Lol So, keep making it how your family loves it!🤗

Mel, you are the first person I have watched cook cornbread and add a good spoonful of Mayo. I do too. A relative of my had me spend the summer with them in Black Mountain, NC. I was 13 years old and she asked if I could cook. I told her yes, mama taught me on certain things. I fixed Mac and cheese for her and made biscuits, fixed dried beans and made her gravy oh and cut okra and fried it. The next day she asked if I had ever made cornbread from scratch. Told her not really so she asked me to get a bowl. I put my cornmeal in a bowl and started to put buttermilk in it. She said, put a good sized tablespoon of Mayo in it. What? Mayo in cornbread. I did it. Heated my pan with oil, poured a bit in the mixture then poured into pan. She cooked the rest. Best corn bread I’d ever had. My friends don’t use it. What a shame. Their missing the good stuff. I cook mine with Mayo and so do my children. Thank you for showing that in this group of recipes.

FYI…fire roasted tomatoes are not hot. They are simply roasted over a fire which actually makes them a bit sweeter and adds a hint of smokiness to them. Delicious!

I found a great recipe from Plain Chicken. I tweak it a little bit and it’s delicious. I made some yesterday. I forgot to mention in my last comment about your dad’s jellies. Yes, our prices here are normally much lower than other parts of the country but now we are just creeping up there with everyone else...I hope you enjoy this soup on a cold evening, it will cozy you right up! Fire roasted tomatoes are not spicy whatsoever. You should try cowboy spaghetti recipe by pioneer woman. It uses those tomatoes (dont recommend Hunts) and it's so good!

We do a similar soup with dumplins and it's bomb!!! My boys like theirs with hot sauce added to their own servings so I keep hot sauce on hand all the time because I'm wimpy like y'all too lol.
