i dont think the fda would be very happy with some of his production methods. its probably not legal to make clams go rancid before selling them even if you grind them into sausage too.

I really like the idea of regrinding failed sausages that had potential. Failed sausages are hilarious but it's great to see a different approach to try to nail it.

I think when dehydrating stuff, it'll be a good idea to add more fat into the final sausage to help hydrate it a little. The meat you use here seems to be very lean and not to mention, the lack of pork water coming out just shows that the dehydrated chowder just sucks up all the moisture in the meat.

Just a FYI, trichinosis has basically been eliminated from farm raised pigs in the US. I'd definitely be more worried about salmonella from the will it blows.

i absolutely love the regrind series. so many sausages with potential that unfortunately burst or maybe could have been prepared just a bit differently. very awesome to see the errors fixed, even if it doesn’t necessarily make the sausage better every time!

Pioneering in many ways - goofy sausage extrusion noises - dehydrating clam chowder (and in general just redoing it) - mixing the ingredients like a ball of dough - having the meat fly up in reverse (admittedly, not the first time, but always funny)

This episode really had it all. The horrifying tray of clam brittle could have been its own NSE, but only Mr. Sausage would take the next step in pulverizing it, sausaging it, announcing that clam chowder sausage obviously isn't very good, and scoring it worse than cat food.
