Dear Mr. Sausage, I've been watching a lot of your videos and I think I have something you have to try against the mushiness! I do not know if it will works well with every types of meats, cans, breads, juices, gasses or duck embrios, but I know it does wonder with ground pork. I guess it should work well with any flavours mixed with a pork base. Just add about a quarter tea spoon of bicarbonate per pounds of your mix and let it sit for about an hour and your meat will have a springy consistency almost like a hot dog. Keep up the grinding and saussaging of our favorite animals! I love it! - Will. 💋

Obligatory suggesting of Ox Tail Sausage. Pan sear them first, for delicious reasons, before slow cooking (or similar) them until super tender! (Also, unless you don't mind paying full price, I'd suggest either waiting for them to go on sale or check to see if any butchers have them "cheap")

I briefly worked at a fishmarket and they would do takeout on the side. breaded and fried whole softshell crab on a sesame bun with lettuce and tomato is one of the few things that make that job not a total regret. Makes their extremely short season worth it. If anyone wants to do it at home, theres some strategic snips you can make to avoid the harder bits of shell. I'll admit it made me wince a bit seeing them go into the grinder/ onto the wall
