Our identities and roles tend to solidify, we settle down to a more consistent, self-chosen life and find our 'niche' in the world, which brings 'us' out even more. You need a good credit score to take out loans, get an apartment, apply for a credit card, etc. A credit score of 230 (which Nick has) is INSANELY low. How anyone at Nick's age has a score that low is arguably laughable, hence the "homeless ghost" joke. Cos it's kinda true.

And it weirdly sets up Schmidt's character perfectly: sometimes ignorantly confident, but not racist at all. He just loves her and doesn't actually care (or know) what her ethnicity is. That's what makes New Girl jokes great. They're not just for humor to pass the time; they actually inform the character's personalities. Too many sitcoms just write jokes and put in them in whatever character's mouth currently needs a line. That's how you get a very bland show.
