This is called funeral potatoes in Utah due to all the pans made for family luncheons by church ladies. ❤ I love it at Christmas with the ham or at any other time, throw some leftover diced ham in and you have dinner. Even better if you cook and shred your own potatoes. Better than Cracker Barrel!

I love hash brown casserole with ham...it's amazing (but it's not really bad with anything, really). We have a lot of food allergies in my family (dairy, gluten, eggs, peanuts, etc. along with people that are vegan) so I have adapted my version of CB's hash brown casserole and I use dairy free sour cream with some garlic and onion powder mixed in in place of the cream of whatever soup and some dairy free cheese. I have cut back on the butter or dairy free butter that we use because it is still just as good with less. Thank you so much for sharing because I had really just kind of made up my recipe and this is a great one to work from. I have also shredded cauliflower and used it for the base for when we are trying to watch our carbs. Still good!

I always wait till after Thanksgiving to even think about decorating for Christmas. Thanksgiving is my favorite holiday cause it's just about getting together with family and eating good food. I feel like the reason they rush Christmas is because Thanksgiving can't be as easily commercialized as Christmas can be. My grandkids are so excited for Christmas, but I always dread it.

@maribethspence9458 I think the reason I don't like Thanksgiving is that it centers on the food..which to me..I rather just get together all through the year..anyway..Christmas should be more about getting together..homemade gifts and cocoa with friends..sad that it isnt..still love to decorate and plan for something fun to happen..I'm sorry you actually dread Christmas !.. maybe it's the gift part..sometimes that causes me anxiety..but I hope this year you have fun

✍Hello Becky...I'm not trying to change or correct anything in your recipe just sharing with you. We love onions, and I've made a similar potato casserole before but I read where someone suggested using "onion chip dip" along with, or just the dip in place of the sour cream in the recipe. I might try it but not sure. That's a good price for those bowls and I love the color. I love your nice suggestion of "not running thru Thanksgiving 🦃 straight into Christmas🎄" but stop and count your Blessings. When I was growing up in the40-50s and going to Sunday School we sang🎶...count your Blessings name them one by one🎶 count your Blessings see what God has done🎶 count your Blessings...🎶 name them...one...by...one🎶 Count your Blessings see what God Has Done🎶 I'm 79 and still remember the music and the words.
