well that was a revelation! my memories of hot dog sausages came in a tin and were heated in simmering water. they were the pink, spongey type. i live in a seaside town and hot dogs were the same. onions were also boiled; i remember the smell, mingled with hot doughnuts xxx

Best hotdogs ive tasted are herta, and i grill them. I also like to make a sandwhich by getting thick bread, putting ketchup on, then the grilled hotdog, and covered in cheese. I then grill to melt the cheese. As for top of the sandwich, i put ketchup 1st and just cheese ontop, grill that also same as the bottom, and squash it on together. Tastes awesome, even if its a heart attack on a plate..

Cutting the way you do, Gareth is spot-on in your own words. It's not just about keeping the body of the onion intact. This method prevents the fumes from the onion escaping thus preventing your eyes from stinging like they have been injected with wasp poison. I've never thought of cooking the onions separately in butter... For me, no salt. Reason being it takes the moisture out too quickly and doesn't allow for the flavour to develop during caramelisation. Crush some Maldon sea salt across the whole hot dog afterwards. That's just my opinion. Great review as always Gareth. Thank you and I'll be trying these hotdogs for sure.

For hot dogs, I just slice my onions in half and then just vertically down each half to give some length - which stops them falling out so much. I also put some salt and white pepper in the pan with just a few squirts of oil (buy one of those low-cal bottles and just top them up with rapeseed oil). Once they get some colour, which depends how you like them, I then add a little water and you can then cook them for a long time - if you like - or I cook my sausages (Herta usually) in that pan until ready. You'd probably need to defrost those ones though.

These look pretty tasty. I like the German Bockwurst in a hotdog with fried onion and of course mustard and Tomato Sauce. But I will definitely give these a go. I am quite impressed by the 80% pork. I have had butcher’s sausages with less than that. They also look like a decent size. I jab the sausages before I cook them, to let some of the fat out so they aren't greasy, and I put salt on at the end, because some sausages can be a bit salty and I like to taste them first. I did giggle at you chopping the onion, that’s the way I do it, get most of it nice and even and then whack the bits I missed. I have a friend who did some serious cookery training years ago and looks on in horror when I chop anything, but he doesn’t leave much!

What you need is a Hot Dog spiralizer, get the novelty one in shape of a hot dog from Amazon, it separates the sausage so you can put the sauces between each segment. I was searching for them last night funnily enough. If you add salt to the onions it browns them quicker.

Hi Gareth. New York or American Hot Dogs are generally all beef or a blend of beef and pork or beef and chicken. The "Best" hotdogs are 100% beef. Depending upon where you are, ketchup is frowned upon as a topping. For more context: a true street dog from NY is all beef, with mustard, saurkraut, and onions. A Chicago dog (the other Hot Dog city) is all-beef in a poppy seed bun. Yellow mustard, neon-green sweet pickle relish, chopped white onions (raw), tomato slices, a dill pickle spear, pickled sport peppers (slightly spicy hot) and celery salt shaken on top. They're both delicious!
