Here in Canada, driving on highways hitting a moose/deer is pretty common. I work in a car rental company and this summer i saw soo many customers coming in to get rental cars for the same reason. You're absolutely right. If you see a animal jump in front of you, it's best to hit the animal rather than than avoiding it as you'll most likely end up in a ditch with a wrecked car.
