The food in NOLA is phenomenal wherever you go. There is no such thing as mediocre food there. It's the one vacation destination where I would return JUST TO EAT MORE FOOD!!

The term "roast beef debris" refers to roast beef that is cooked to the point where the beef ends up as crumbs, strands, and small chunks of beef as opposed to distinct slices of beef. It may not sound like a favorable term, but it's very delicious because it holds onto the juices like a sponge and it's extremely tender.

I can answer a couple of those. DONT go June-Sept. The heat and humidity is awful and will ruin the fun, you dont really need a car and i think 3 nights is just about right.

Go in February when it's Mardi Gras! Most of us locals head out of town while travelers come in for Mardi Gras now haha. New Orleans is a city like no other - it's hard to describe but it's one of a kind.

Most people drive here, but the streets can be difficult and parking is a bitch, unless you want to pay. I know how I get trying to navigate strange cities, and N.O. would frustrate me for sure.

The more traditional gumbo prepared by my NOLA family has always been of a thinner consistency than the thick roux versions you see in some local restaurants.

When we went a few yeas ago we had beignets at Cafe Du Monde and some of them were a little doughy. Jackson Square was so pretty. I hated the humidity, ugh. I don't remember where we ate but one place had delicious seafood and a lunch counter. We stopped at the muffaletta place but they were sold out? The Italian restaurant at the end of that mall had delicious food.

Next time when in New Orleans you have to try Dragos at the Hilton. They have fantastic charbroiled oysters. You won’t find any better!!! I’ve tried them at a lot of different places and no place even comes close to Dragos.

That gumbo looks excellent! My family is from Louisiana and the only place I’ve ever had thicker gumbo was at a restaurant. The thinner, soupier, is definitely more traditional and homestyle. I love it.

My mom and I visited Chef K Paul’s restaurant on October 7, 2015. We were so excited as he was our favorite celebrity Chef! We sat on the upstairs balcony overlooking the (Church)? We had the best meal and commented several times that this was why people loved New Orleans. It was strange, only because I am usually adamant about an inside table. I hate outside dinning, except occasionally in Hawaii. But the food was really wonderful and my mom and I talked about Chef K Paul and wether we should buy his seasoning! After a bottle of sparkling wine and a fantastic dinner, we decided not to ruin any memory with our cooking and K Paul’s spices. The next morning while showering and getting ready for Cafe DuMonde, my mom and I heard of Chef K Paul’s death! It was shocking. My mom and I cheersed to him at the carousel bar that night, knowing he’d spent one more evening making our night special!!!
