That's going to be a cool project! I have a vintage KNK Hobbies Sea Comet which is a 26 inch ABS cabin cruiser-style boat that I converted from submerged drive and rudder to twin TFL Mini Outboards like yours. I run counter rotating props on mine. All you need is Octura left and right rotation .098 flex cable systems from OSE. Each kit contains either the left or right flex cable, liner, 1/8" (3.17mm) prop shaft, drive dog and nut - basically everything you need minus the props. You'll need to cut the cables to size and solder (or red lockTite) the cables to the prop shafts. The other end of the cables will slide into the stock motor coupler, but it is best to solder the end of the flex shafts to prevent unraveling, and then grind flat spots so the motor coupler set screws have something to dig into. It's worth the effort because your boat will accelerate as straight as and arrow and turn very well in either direction. Running two left rotating props will require a lot of left trim to get it to accelerate straight, which will cause the boat to pull to the left whenever you let off the throttle. Just advise from someone who's been there. In either case, I'm looking forward to following your build. Oh and congrats on the new truck - that thing is awesome!!

Got same boat but im building a in board with it.40 series motor was thinking a outdrive or a z drive outboard unit but i have everything for traditional build, so maybe next time but cant wait to see your build peace
