I'm confused at 8:05 she stopped at the stop sign first, so she gets to go first is that not how that works?

Only works if its a all-way stop (where in it is first-stop first go). She hesitated in left turning to the point that the oncoming vehicle was already waiting at the stop sign when she proceeded, hence the right call was to give them the right of way since they were going straight.

you can rotate the mirror to see curb

For similar sized cars, just align the side mirror of your car with the side mirror of the parked car. This should more or less align the back wheel
