When will Tinkercad have a “fillet” function? And I’m not talking about a “work around” to get that effect, I’m talking about the real thing. That would be awesome.

Agreed, it would be a great tool to have. Only Tinkercad knows, they are always updated their tools so it could be coming, we'll have to wait and see.

How can I use cruise to put a bevel on two surfaces the neither on a 90 deg.

The cruise function is primarily for attaching 2 surfaces together, mainly onto a flat surface. There are ways to create a bevel, but it can be tricky. Check out one of the latest videos posted on this channel a couple of weeks ago explaining 2 methods for this.

Drag a workplane onto your surface, add a "hole" cube to the plane, rotate cube by the angle of your required bevel, lower/raise the cube until you get the required width of bevel.

having to resize the object to get the right points instead of just letting us align by centers of all faces or edges is really dumb...

It would be less disturbing if you stop moving the mouse around so rapidly while you are talking.
