Nicola's Favourite [sourdough bread scoring pattern]

This is my all-time favourite scoring pattern. You can score it on a dough that is not overly soft, like my 50% rye sourdough or a low hydration white loaf. You can use any good lame to score as long as the blade is still sharp. I'm using a Sonic Lame as I find it easiest to score clean cuts.

just wondering how tricky it is to avoid screw bolt on the side. Turns out I have a Philips sonicare toothbrush. I had difficulty using the Baker of Seville. bread lame because the screw belt kept dragging on the dough top.

Good point, Diane! I've experimented with many different thumb screws until I arrived at these, which are rather thin, so they don't stick out as much. In 100 bakes, the screw doesn't meet the dough 99 times. The remaining time it leaves an almost not noticeable imprint.
