I loved the series filmed in her house in Shepherd's Bush. It was a beautiful house and garden, and everything felt very homely. Plus, she seemed more at ease there than she did here (probably because of Saatchi). Not to mention all the books!

Love Nigella. The chicken dinner looks great. Not too sure if I would like the cinnamon/cumin on there though. You have to properly season chicken too.

ive never understood why this series left out salt she always goes on about loving salt, taking it with her, undersalted meat is vile...but on this show no salt? none in the pork chops either.. oh well. we know Nigella seasons properly
@nope_nope_nono
@nope_nope_nono 2 жыл бұрын
@@theblueangel28 she says in her book that salt is a very personal thing. People's tolerances to it or desires for it varies enormously (her words). That's why she prefers to let people season dishes to their own taste. She uses salt, but won't give measures

@@nope_nope_nono But by adding salt at the table you actually consume more. It is always better to salt the food while cooking.
@theprousteffect9717
@theprousteffect9717 Жыл бұрын
@@akankshapatwari4167 Nigella is talking about people's taste preferences, not health concerns or dietary restrictions. She wants everyone to be able to choose how salty to make their meal because preferences vary so widely. She doesn't add much while cooking and allows people to do it themselves when they're served. Even if the issue were health, it's still better to let your dinner guests have more control over the amount they're adding rather than the cook deciding how much is appropriate for everyone at the table.
@akankshapatwari4167
@akankshapatwari4167 Жыл бұрын
@@theprousteffect9717 How will you add salt to meat dishes? Especially chicken drumsticks. If you add salt at the table only the top layer will get salted and the rest will be bland. Quoting Nigella here : Undersalted meat is vile. Why not add a reasonable amount to the dish? and keep salt on the table and people can add more if they want to. This should work unless you are on a total salt free diet I think an experienced cook can add an amount which is palatable to the majority. Don't caterers who cook huge quantities manage to satisfy hordes of people with their food? Food that is undersalted spoils quicker this is especially true in hot weather and tropical climates.

I suspect that everyone seasons to taste at the table. In her older shows she usually seasoned after cooking; she said that if you put salt on before roasting/cooking, it can make the water/juices leak out of vegetables and meat, making them braise instead of roasting. The juices in meat contain flavour, so salting the meat after cooking enhances the flavour.
