@@ladypinkymoe7574in traditional ramen restaurants in Japan they boil pork/beef/chicken bones up to 20 hours for the soup base. You end up with a very concentrated bone broth- almost milky in texture and rich in collagen. It's because it's so time consuming and labour intensive hence why Nigella stated that no Japanese person would make ramen at home- the Japanese are notorious for working the longest office hours anywhere in the world. But honestly if you have the chance to eat proper ramen- the broth is the star of the show!

This is something I will cook at 2 am because I don't have the energy to cook as in cook something and cannot make much noise because it's night and my mom and dad will beat me. @Nigela, WHO told you that “in NO uncertain terms would a Japanese person make Ramen at home”? Are you talking about the Noodles or the Dish? The Noodles, yeah, because they’re difficult to make and is something to be mastered all in itself, but the Dish, Ramen is made at home ALL the time! I think you might have misunderstood what the person was telling you. Also, that is NOT how to make Ramen. IF you were to make a proper soup base from scratch, it would take at least 2 days of boiling and reduction of many ingredients that aren’t Bok Choi and Radishes...

You don't need a PhD in ramen to see that it's not "true" ramen - in the same way you don't need a PhD in fish and chips to say that steamed dover sole and Mcdonalds fries isn't really fish and chips, nor a PhD in English breakfasts to say that a jumbled collection of fish fingers, mashed potatoes, refried beans, garlic croutons and spam isn't really an English breakfast. That doesn't mean none of the food is tasty however, just that it's not really what it purports to be.
