I just made this entire meal. The pea salad and grilled eggplants are incredible! The Maldon Salt gives a nice crunch tobthe eggplants as well. So simple yet full of flavor. Yorkshire pudding as a pudding is delicious, so I made a double batch to eat both with the roast beef and as a dessert. I also included a simple red wine sauce to make everything come together.

To people asking about the "salting your aubergines" - traditionally after the eggplant is cut into the large slices, one would salt them and let them sit - to make them weep. They would give off their natural liquid which was bitter. She means that she doesn't salt them BEFORE cooking. Salting them at the end is merely for flavor.

Giada is slim and perky with a great big smile. Giada presents the recipe. Nigella is genuinely interacting with the food, she loves the feel of it, the scent, the flavors and when she has a bite it is with gusto. She sometimes turns away when she has a big bite and discreetly wipes the corner of her mouth, that's charming. I wish there were more episodes I could watch. I've made the Pea Mint Avo Salad, grilled eggplant, Lemon Linguines which I altered into a Carbonara and am now working my way through Pavlovas! Perfecting the Pavlova has become my obsession!

it's just personal preference. To me pink or red meat has a strong metallic taste that puts me off. I'm not crazy about the texture either. But everyone should eat what they like. If you like it, it's done right.

Wow I’ve never seen peas mixed into lettuce as a salad. It’s usually just a side dish or something added to dishes. It’s actually a cool idea I should try. Meanwhile I had to find out what an Aubergibe was before realizing it’s just European for eggplants lol. Fancy! I like!

I will only eat red meat RARE....but because I live in America I am often disappointed with restaurants because they tend over cook red meat all the time. If you ask for “rare” they always end up giving you “medium rare”. Which is maddening. That is why I prefer to NEVER eat out if I can help it. I will go to the butcher and get a beautifully marbled ribeye 🥩 I prefer it truly rare. Only seasoned lightly with some good sea salt and cracked black pepper. So many people in America put steak sauce on steak and it’s infuriating. A good steak needs NO steak sauce. *Steak sauce is for tough and grisly cuts of meat that are not enjoyable on their own*

Part of the problem is that red meat especially continues to cook even when removed from the heat. So if it's left sitting whilst they prep the rest of the food, that is why most red meat orders come out cooked past the desired temperature.

The only eggplant/aubergine experience that was bitter came from one i picked too late. Ive picked them while smaller ever since. Never salted mine neither

And you'll notice after she went on and on and on and on about not salting them, she says "all they need now is oil, lemon and SALT." So yes, she IS salting them, which made her speech make no sense and she contradicted herself.

Beef precisely how it should be ...... i.e. not roasted to the point where chewing old boot leather would be less of a chore. As a Yorkshireman I can say that having Yorkshire pudding as a pudding was not the done thing in my childhood, we always had them with the roast dinner. I'd actually left home before I ever tried them as a pudding, not really my cup of Darjeeling tbh.

Easy Yorkshire pudding, 3 large eggs, 125g all purpose flour, 1 tsp salt 150ml of water and milk together (makes them lighter) very very hot fat and 15/20 minutes in a very hot oven

She used Lyles golden syrup which is a light kind of treacle, you could substitute honey or maple syrup if you can't find it. She used double cream which has a very high fat content (about 48% sometimes) I think this kind of cream is not popular in America, just substitute the highest fat content cream you can find, maybe heavy or whipping cream.

Its a British thing. Its cane sugar syrup. They use it on pancakes and such the way Americans would use maple syrup.
