Nne, I just need to tell you that your method for peeling of beans is OUT OF THIS WORLD! I love moi moi but the main reason behind me not preparing it is because of the peeling stage. I used your blender method and within 15 minutes I don peel beans finish. Hmmm Imela oooo. Chukwu gozie gi. Well done Madam and lots of love 😘 😘 😘

Mashallah! Good evening ma! I never tried akara but i use to make a similar recipe of asian origin! Pakora but instead of fresh beans i use bean flour (gramm flour) and indeed is delicious! I ill definitely try making akara but i dont have hand mixer i have only blender! I hope that can do!

Fatima Noor Ahmad Yesss dearie the blender is perfect. The work of the handmixer is to make the paste smoother. Since you don’t have the mixer, blend the paste two times instead. Then use spatula or spoon 🥄 and beat the paste for 5mins. Thanks 😊 dear💖💖 We also use the bean flour. All we do is add water to the flour to turn it wet. So it’s the same with the Pakora

Remember the paste should be thick as you see in video not runny. Use tiny water to blend the beans

Thanks for sharing. Does using the whole beans (which is healthier)affect the consistency or taste of the loose? Can the paste be done and kept in the fridge the day before frying?

Afi B By whole bean do you mean the Nigerian brown beans? If yes, you can use that it’s perfect 👌 but any other bean varieties is a No dear. I haven’t kept mine in the fridge before. The cake can definitely get sour fast therefore best to fry immediately but you can try and see if it works. You can also soak your bean overnight after deskinning and make the rest of the preparation next day morning . In few minutes ur Akara is ready 😂😂👌👌😉

@@QueenvarietiesChannel Hi ,I am thinking about blackeyed peas or the small red ones (Ghanaian variety). I usually soak for 3 days-washing the beans daily in fresh water so it doesnt cause gas. Thanks.

Awww 😊 My dear use the Black eyed beans as I used in the video or the other Brown light beans that looks like the white beans texture. Only these 2 type can be used for Akara. No matter how healthy the other beans are once you fry it, the health benefits are reduced. Other beans species are better for cooking and boiled etc. you can always eat Akara/Koose once in a while okay 👌. THANKYOU dear ❤️

I wanted to please ask in the video (during the blending of the de-skinned beans to make the bean paste) you said you added ginger but in the ingredients list - in the notes below the video - you said “garlic”. I wanted to please confirm do i add garlic or ginger? If i should add ginger at that step then, how much ginger should I add? Thank you, Ifemayowa

Actually when making Akara its not important to add ginger and Garlic in the basic recipe. For me i add dem in most of my meals. You Can totally skip the both or any of Them if you dont like it okay 😊😊 Add less Dan a THUMBSIZE ginger and 3-4 Garlic cloves if you wanna use any of it.

It meant you scooped plenty batter to fry( like you used a deep item to scoop)😀Try something flatter Then it wont be too heavy. Also if it soaks too much Oil it Can become heavy. Make sure the Oil is at the right TEMPERATURE ok. Medium heat towards low

Ruth THE SECRET TO AKARA IN MY OPINION LIES IN THE BEATING EITHER WITH THE MOTAR OR HAND MIXER AS I SHOWED. Thats what enables the Akara to rise Well. But you Can add little light coloured crayfish together when you are blending the Beans NO salt till last. It Will come out Well. Remember crayfish is always optional as not everyone eats that. I have seen many people make Akara with crayfish and it came out risen and yuuum to Them. Thanks👌🙏

I had takara at an african deli 20 years ago and have been looking for the recipe ever since. The owner also gave me some reddish brown powder to mix with water for a sauce to dip them. Anyone know what kind of sauce it was?

Okay 👌. Maybe it’s called Tombrown. It’s a mixture of roasted dry blended seeds of rice, groundnuts, wheats, corn, Guinea corn and millet.etc. Extremely healthy. Salt is believed to destroy the leavening property of beans. This is what prevents spattering of the beans batter during the frying process. That is also part of the reason we add salt last when cooking or BOILING Beans. Makes the grains take so long to cook.
