In before the "it'll never work on the street" crowd. He's not teaching you "if the bad guy does this, you do this". He's showing the concept of moving in such a way that your opponent can't pick up on what you're doing and resist it. Instead of fighting against the opponent to bring the hand to the knife, he brought the knife to the hand. Then, he used body mechanics to place the knife on the opponent. Instead of moving the part that the oppent was grabbing, he moved everything else around it.

Excellent assessment. The principles of movement are quite different and when practiced properly and learned provide some very efficient solutions.
