Andy, congrats for this amazing video. I will have to add this restaurant to my list for the next time I visit Peru. In recent trips to Lima I have noticed that some maki rolls are served with that creamy and delicious sauce and some nigiris are blow torched right at the table. This is what Nikkei cuisine is all about. Thanks. I can’t wait to go back to Peru and try other great restaurants as well

Hi Adolfo. Yes you must visit Osaka when you go to Perú next. They also have one in Miami too so even closer to you if you’re ever there 😃 yes you’ll find that acevichada sauce in almost Japanese restaurants. It goes so well with the maki I could have an entire bowl of it. Imagine a fresh & zingy tigers milk but mixed with a delicious creamy mayo. Glad you enjoyed the video!

It’s so delicious! You would enjoy this type of sashimi it always comes with some tigers milk sauce that cures the fish slightly and gives it a great flavour

Que interesante tus explicaciones y tus sensaciones de este restaurant Nikkei, espero poder visitarlos pronto, vivo en Barcelona ya más de la mitad de mi vida pero siempre llevo en mi corazón mi comida, mis épocas ( soy de los adolescentes de los 80’s) y cuando vuelvo intento descubrir lugares estupendos como el de tu video Andy, Gracias! I don't care what they say. Nikkei food is mostly Peruvian with a very dash of Japanese. The fusion delicious. But they forgot to tell the Japanese that they have this type of their cooking in amazing Peru. It is called Nikkei because they throw a bit of ginger or wasabi in the Leche de Tigre. Nobu, the great cook of the Nobu Restaurants couldn't find the Japanese ingredients for his cooking, so, he reverted to use Peruvian produce instead. World famous now. Robert de Niro, the actor and his partner, visited Peru lately & apparently couldn't stop eating. Next time I'm in Lima for sure I will go to 'Osaka'. Looks absolutely fantastic.

Absolutely! Peruvian with Japanese influences. I love Nobu, they've got a restaurant in Sydney too. Not many people know Nobu actually lived in Lima, Peru and opened a restaurant there many years ago. He was the first major chef to really introduce Nikkei Cuisine to the rest of the world, not many know his restaurant is Nikkei Cuisine either!

Oh that’s really interesting! We also have Chifa in Perú which is Peruvian + Chinese! A video I’m going to release in the next few weeks. What’s your favourite Nyonyan dish???

Thanks very interesting and originally, Nikkei was known to all Japanese descendants born outside Japan, so that's Nikkei too! the only thing is that "Nikkei" is associated to Peruvian-Japanese culture nowadays. I just checked some about Nyonya culture and it looks AMAZING!. I'll try to make some of that here in Peru :)

Hola! As a consequence of the Spanish colonising Peru, the African, Chinese, Italian and Japanese immigrations, Peruvian cuisine was enriched with new techniques and produce. Our cuisine is a literal melting pot of flavours and traditions from all these different cultures. These large waves of immigrants, became integral components of the cultural and culinary framework which is Peruvian cuisine.

The English word for Aji is Chile/Chilli/Chili (depending on where you live). Go educate yourself...

Charo Mendiola, you are right. Aji, in English is hot pepper. The word chile is from the Aztec language Nahuatl. Since Mexico and the United States have a common border, many things crisscross including the Native American Indian words from Mexico. Afterall an enormous number of Mexican people live in the United States. And U.S. English have taken those words to other English-speaking countries, like Australia where Andy lives. In Peru there are many, many kinds of ajies, like the one from the Peruvian Amazon, pinguita de mono, aji verde, aji habanero blanco, charapita, also rocotos, and so on.
