I like how Nile is smart enough to synthesize chemicals yet not smart enough to use a seive to get the floaters out and drain the water a bit to make it easier to get the sinkers. No Nile, uses his hand to fish out the floaters then trys to grab them as they moon gravity float away. 10/10

Only at 19:50 right now, and Nile. Word of advice for anything cooking ever, unless it says otherwise or the intention is to sear it, start with lower heat and more time for best results. Good rule of thumb when heating anything edible. Other than that I love the vids and keep it up, hope this helps.
@Galerak1

And possibly go with how the things look rather than strict time limits. Those beans looked done at 28:30 but he still stuck them back in and cranked up the heat. I'm not a roaster or a chef but common sense tells me that when something looks done you don't whack up the heat and throw it back in the oven 🤣

There’s something about watching Nile do things that makes it way more entertaining than just learning about the process somewhere else. Like, I could’ve watched a ‘how coffee is made’ video anywhere, but seeing him go through it step-by-step with his own style just hits different. Love his vibe!

Pretty sure freezing extracts non-solubles towards the surface and causes lower density once it the surface defrosted in the bath. Increasing the number of floaters.

From what I gather the floating vs sinking bean is because of density, the more dense, the richer the flavor. I'm sure though large coffee use the floaters since its waste product.

Dude you need a decent coffee roaster. Something which can be temp precise and pay 100% attention towards the end of the process because 1 min or 30 Sec can change between brown to black. You need to start super hot with preheat and drop the power towards end short before reaching the first crack.
