Kashmiri Aloo Dum is one of the most preferred veg recipe where the fried Baby Potatoes cooked in yoghurt and tomato based gravy. Today I have prepared this recipe in dinner and searved with loochi as today we are veg. It is just wonderful in taste. Today I kept in mind tomato and curd amount. One thing I have compromised that kaju was not good enough in my kitchen so I added little kaju and melon seeds together and get a combined paste but ultimate outcome just wonderful. Love it

এই রান্নাতে আমি কাশ্মীরী লঙ্কা ছাড়া আর কোনো কাশ্মীরী মসালা বা ড্রাই ফ্রুট পেস্ট দেখলাম না। কাশ্মীরে এক সময় ভুত্বাত্তিক অনুসন্ধানের কাজে থেকেছি। আমার দেখা সেই কাশ্মিরিরা তাঁদের রান্নায় বড়ো এলাইচ, পেঁয়াজ, রসুন, তেজপাতার মতো একরকমের পাতা, জাফরান, ইরানী হিং এবং ফ্রেশ ক্রিম ব্যবহার করে থাকেন। আলু ওই অঞ্চলে সহজলভ্য তেমন নয়, পাঞ্জাব, হরিয়ানা বা হিমাচল থেকে আসে বলেই সেটি তাঁরা তেমন ভালোবাসেন না বলেই তাঁদের মুখে শুনেছি। তাঁদের মুখে শুনেছি যে সব খাদ্যপদার্থের নিজস্ব জ্বলীয় বাস্প থাকে এবং সেই স্টিমে যেসব রান্না হওয়া সম্ভব সেগুলিকে দম বলা হবে। কাজেই এই রান্নাটি কি নামেই কাশ্মীরীদের রান্না আলুর দম না আমার জানাতে কোথাও ভুল আছে সেটা জানতে চাই।
