Ingredients for Veg Spring Rolls
For Dough:
Refined Flour - मैदा - 1 Cup (125 grams)
Salt - नमक - 1/4 tsp
Oil - ऑयल - 1 tsp
For Stuffing
Oil - ऑयल - 2 tsp
Ginger - अदरक - 1 tsp, grated
Green Chilli - हरी मिर्च - 2, finely chopped
Beans - बीन्स - 1/2 Cup, chopped
Carrot - गाजर - 1/2 Cup, chopped
Green Capsicum - शिमला मिर्च - 1/2 Cup, chopped
Red Capsicum - लाल केप्सिकम - 1/2 Cup, chopped
Salt - नमक - 1/2 tsp
Black Pepper - काली मिर्च - 1/2 tsp, crushed
Cabbage - पत्ता गोभी - 1 Cup
Soya Sauce - सोया सॉस - 1/2 tsp
Vinegar - सिरका - 1/2 tsp
Tomato Sauce - टमाटर सॉस - 1 tsp
and
Oil for Frying
How to make Veg Spring Rolls
1. Mix refined flour, salt and oil in a bow. Add water as required and knead a soft dough. After kneading, pour some oil and knead it well. Cover and keep it for 20 minutes.
2. After 20 minutes, mash the dough a bit and break small balls from it. Keep them covered.
3. Take a ball of dough and dust it with dry flour. Roll it 3-4 inch diameter. Place it on the plate and roll the 3 balls the same way.
4. Take one puri, pour some oil and spread, then put some dry flour and spread. Place the other puri on it and paste. Put oil and dry flour on it too and spread and place the other puri and paste.
5. Dust some dry flour and roll it thin. Now heat the tawa a little and slightly cook the puri from both sides.
6. Take it out and remove all the three puri from each other. 3 wrappers will be ready. Make all the wrappers the same way.
7. Heat oil in a pan. Then saute ginger and green chilli a bit.
8. Now while stirring occasionally add beans, carrot, green capsicum, red capsicum, salt, black pepper and red chilli powder. Mix everything well.
9. Then add cabbage, soya sauce, vinegar and tomato sauce. Mix them well and turn off the flame.
10. Mix refined flour and water in a cup and make the slurry.
11. Place a wrapper and put stuffing on the upper side of the sheet. Cover the stuffing from all the three sides then apply slurry on the other end,roll it and make a cylindrical roll. Assemble all the same way.
12. Heat the oil, it should be medium hot and the flame should be low-medium. Put the rolls in and fry them till they turn golden brown. Take them out and fry all the same way. Serve and enjoy the taste.
