I hear you loud and clear when you shout at me in the comments about "That's not a Philly Cheesesteak!". Well, today I'm making an authentic Philly Cheesesteak, and I've got an actual real deal Pat's King of Steaks cheesesteak sandwich straight from Philadelphia to compare it to!
I even bought a master case of the Amoroso Italian rolls to try and make my Blackstone cheesesteaks as authentic as possible. And I get it now... the rolls DO make a HUGE difference!
All 3 of the Blackstone Philly Cheesesteaks that I made were fantastic - the Pat's King of Steaks cheese steak, my replica of that one, and my version with all 3 cheeses and my favorite all purpose seasoning. You can't go wrong with these griddle cheesesteaks!
*Don't yell at me about not ordering the Whiz from Pat's... To be honest, I'm not a huge fan of Cheez Whiz, and technically, provolone was the first cheese to be used on a Philly decades ago.

With the internet and KZbin it’s easier to get a clearer picture of a Philly style cheesesteak…..Back in the 90s, it was of course much more difficult if you never been to Philly

@@TheFlatTopKing I suppose it’s no different than the BBQ debate in KC. The battle between Gates or Arther Bryant’s bbq. Are they the best? Probably not but they are the oldest. For me I’m all good until people start assigning the burnt end tag to anything but the point of a brisket. But these days I try and bite my tongue. I may know the difference but people need to be allowed to express themselves through food. LOL we all have our personal idiosyncrasies. Anyway I appreciate all you two do.

You can put peppers on a cheesesteak but it’s actually not common in Philly but it definitely does exist. Some places in Philly have good quality house made hot peppers and it works.

There are so many Griddle PHD's out there, sometimes it's hard to get through the smoke and really see the experts, you don't have that problem. Your versions are normally cranking the flavor and taste up from any baseline and one the average griddler can master very easily. You two keep doing what you are doing, unmatched.

Love that you responded to comments and made it as authentic as you can. I was born in Philly and visit yearly. My family likes Jim's Steaks and go there when we visit. I liked the rough chop of the onions like Jim's and my go-to is the whiz-wit. That being said, your 3 cheese version looked amazing. I agree that the roll makes a huge difference. Whenever we make cheese steaks at home, we continue to try to find something that compares (and haven't found the answer yet).

Awesome video, I live in Philly, the key to making a Philly steak is shaved ribeye on a long, somewhat crusty sesame steak roll with Cooper sharp with long hots! That simple ! Tourists go to Genos and Pat's- its okay but there are so many places that do it better! It's like ordering from a Domino's in NY -technically it's a NY pizza because they are in NY but it's not really a NY pie

My son and I went to Philadelphia in 2019 to see a concert at the Union Transfer and while there we asked the locals where was the best place to get a Cheesesteak. Nearly every one of them said to avoid Pats King of Steaks. We were very surprised to hear that. They called it a tourist trap. The one place that kept coming up in their recommendations was a place called Sonny's, so we went there. It was awesome. An added bonus was my son got chewed out by one of the cooks for sitting down to save a table before we had our food. LOL!!! It's kind of like the Soup Nazi from Seinfeld in there. You have to know what you want when you get to the window, they were very explicit about that.

I live in Philly, ask any person who has the best cheesesteak and you will probably get a hundred different answers. Alost everyone makes them the same way. Yes the roll makes a difference and no self respecting sandwich shop put peppers on their steaks. Mushrooms in my opinion are okay. I like American cheese, fried onions on mine but to each his own. Great video keep up the good work.

I did the same thing while i was seeing a Philly bb game. Had both Pat's and Geno's. Pats was better but I've had better cheesesteaks at other places

Thats what I have heard...Pats being the original most want to pay homage...but many other places like Jims or corner markets sever better...not the bodega but named something else

@The Flat Top King yes u are right. When we visited all the locals we talked to pretty much said those 2 places are just a tourist attraction and they don't go there. We had to try them just to say we did. I wasn't all that impressed honestly. Next time we go I do want to try the local favorites.

Nothing but love and respect to Philly!!! And I'm an East Coast boy and consider myself a sub expert!! But I'ma tell you something right now bro...if you opened up a sub shop in Philly, or anywhere, you would be a legend!!! The triple cheese literally had my mouth watering and when you look back at all the other amazing subs/sandwiches you've made? I just don't have words...🙌🙌🙌

I wish you guys would do this same level of comparison for the greatest sandwich of all, the Chicago Styled Italian Beef Sandwich, also know as the "Wedding Sandwich." I know it incorporates a pot. But that sandwich is off the chart better than the "Philly." BTW, this was one of your very best cook recipes.

Nice video. I'm from Philly area and one thing I'd add is to hollow out the inside of the Amoroso roll. Steak places automatically do this when making a Cheesesteak.

Neil, here's a recommendation for you that adds a snap to a cheesesteak. Many Pizzaria's in Philly and South Jersey use Sharp Provolone on their steaks. You may have trouble finding it in East Tennessee but if you can, give it a try. Go Bucs!!!

I think its funny that most steak shops in Philly offer mushrooms and peppers on their cheesesteaks. One chain pizzeria with locations in Philly, south Jersey, Maryland and Deleware sells a "Philly Cheesesteak " that has sweet peppers, onions and mushrooms with provolone. They are the only place that I know of that uses sweet peppers instead of fresh bell peppers. As far as the bread goes Amoroso, Liscios and Serpe seem to be the brands most popular in north eastern MD and south east PA. Del Campo was another biggie years ago. Overall another great video with perfect timing as I bought shaved steak earlier today and will be doing cheesesteaks sometime this week. "

I live in the northeast corner of Maryland. 30 miles from Philly been to Philly had authentic Philly cheesesteaks at the Phillies games. Never knew they use those rolls. Those are the only rolls I can find in this area I feel stands up to making cheese steaks or subs at home. You definitely teach me something today. And honestly, not a fan of the cheese whiz. Give me a good melted chopped in American cheese and I’m happy.

I am forty-five minutes from Philly and have had both Pat's and Geno's and they don't compare to your cheesesteaks especially the three cheese version. Thanks for sharing.

Awesome to see you were able to try Amoroso rolls way down in Tennessee. We live near Hershey pa and are lucky enough to have Amoroso rolls in our local grocery stores. Use them for lunch meats or the famous cheesesteaks on the griddle. Thanks for all the great videos.

Since moving from South Jersey to Las Vegas almost 30 years ago, I've always found it difficult to find a good Philly cheesesteak. I finally found a place about 15 years ago and they use the Amoroso rolls. That is the key. Use whatever cheese you like, the roll makes it or breaks it. Now that I purchased a flat top, I'm going to try out my own Philly cheesesteaks, if my local place can sell me the rolls only.

Hey Neal, Amoroso‘s recommends to heat their bagged rolls for 3 minutes at 325 degrees. Might give you a crispy crust.

Hi FTK, just ignore the ignorance of the trolls. I live in Lebanon, PA, and I still use green peppers and sauce in mine. I would love to go to Philly for one of their genuine cheesesteaks. The problem is that I don't have a bullet-proof vest, lol! 😂

We have been to Philadelphia and ate at “Sonny’s” , in my opinion the bread is not as “ breads. I live near San Francisco, CA and have access to really good sour dough rolls. I scoop out some of the bread, and it taste similar. They are all awesome.

We sometimes spritz a roll with a little water and pop it in the oven for a few minutes to get a little extra crisp. Maybe it will help get your rolls closer to Pat's.

I love cheesesteaks and I would rather have your version FTK! I live in Chicago and the cheesesteaks and Chopped Cheesesteaks are better subs than the Italian Beef. It is all preference and thats what I prefer! I agree with Bad Mr Frosty, a cheesesteak is wherever you are making it and whatever you prefer on it!

Used your seasonings for the first time last night. Shake That for diced white potatoes and onions in a half pan on the pellet grill. Fantastic. The butter… yum. Smash that on some sirloin steaks on the Big green egg. Excellent. You’ve got two winners there. Thought they’d just be the same ole same ole (I have a ton of seasonings) but they are different in an exceptional way. Always enjoy your videos. Keep up the great work.

Whenever I go to Philly and want a cheesesteak, I go to Jim’s on South street. I have to tell you, yours looks awesome and one that I would do with the Whiz, provolone, onions and Bell peppers. You’re correct about the difficult to find perfect roll. It makes all the difference. Another nice job!

Jim’s burned down, but they say they’re rebuilding soon. South Street is not the place to go anymore because of the crime. But there’s no lack of great steak shops.

Some good memories. Retired now, so probably never go back. Guess I’ll have to make my own cheese steak in the wilds of NV using Neal’s outstanding example. Can’t find a Yuengling Black and Tan out here, though.

Nice job! You definitely made some quality steaks there. Love your channel. Jim’s is definitely a top spot (there might be a few better). Pat’s vs Gino’s is a tourist spot, but worth the visit to experience. The rolls are what it’s all about. The pre-packaged Amoroso rolls are a good substitute for the real thing. But they are definitely different than the ones you’d get in the city. We have several quality roll brands. I honestly don’t know a single person who orders provolone on their steak. It’s American for most or Wiz for the others. Wit or witout is onions (and mix them in that steak and cheese before your put it on the roll). And you can add ketchup to top it off. Now, there are a million acceptable variations. And you’re welcome to all of them. Including with peppers. Philly sells them. We just give them different names. Hell, we sell pizza steaks. But the mayo guy is out his got damn mind. No one does that! 😂

Pat's was the originator of the Philly Cheese Steak but now is mostly a tourist destination. The current king of Cheese Steaks in Philly is Angelo's in south Philly. Look up Angelo's in youtube and study how the sandwich is made. Your cheese Steak may be tasty it's not a Philly Cheese Steak. The meat must be finelly chopped and well blended with cheese and fried onions. If you really want to kick it up add Longhot peppers or Banana peppers Cooper Sharp for cheese and a sesame seeded roll from South Philly.

Great job! The roll makes the sandwich. Not just the Philly Cheese Steak, hoagies and sandwiches in general, not sure why, but it’s always better here in the North East of the US. I travel all over the world. NOTHING beats a sandwich in the North East!

Neal I went to a cheesesteak place once (not in Philly). They had one that was meat, onions, Provolone and Philly Cream cheese. It was called a "Philly Philly" and it is fantastic. If you see this comment and decide you want to try it be careful that effing cream cheese will Melt your face and it retains the heat for a long time.

The roll is steam baked. You can get a casserole cast iron pan to do rolls in line a Dutch oven.
