I have followed and made many cheesecake recipes but yours is one of the best recipes I have tried. The main point is using Mascaprone instead of cream cheese. i also added 2 spoons of yogurt as I dont like if its too sweet. Thank you for sharing this yummy recipe and your positive energy ;)

If you add a little bit of gelatin it’ll set in the fridge rather than the freezer. You can also achieve a set in the fridge by using a cream with a higher fat percentage. Around 48-50% should set in the fridge without any gelatin. I don’t know if you have cream like that there. Here in Australia and in Britain it’s called double cream. I’ve done it and it does work. I used cream cheese with it but mascarpone has a higher fat content than cream cheese so it should work with that.

I did a very similar recipe as the filling for a tiramisu Christmas 🪵 cake. My lesson learn for the proportion is to use 50% mascarpone and 50% cream. I follow a recipe that specify 700g of cream for 400g of mascarpone and my guess though I did a cream filling as nobody detected the mascarpone.

Hi! Nice to see ur video. Its very inspiring me 🥰 i was bought Tatua Mascarpone Cheese. And i think a cheese taste isn't so felt. The milk inside Tatua Mascarpone Cheese is more dominant than a cheese. And in ur video, we should to mix Mascarpone Cheese with heavy cream and etc. Can you guarantee the cheese flavour isn't gone bcz of Heavy Cream? Hi there! This cheesecake has a very mild cheese flavor, as mascarpone in general is a very mild cheese. The more dominant flavor is the almond. I hope this helps, and I hope you enjoy!

Hi there, you should store this cake in the freezer. You can take it out about 15 minutes before serving to soften slightly before slicing. I hope you enjoy!

@@susangauthier3317 somehow I missed that you replied! I often use Bel Gioioso brand as well, so we can rule that out. The pie should definitely have frozen solid. This is a bit of a mystery (unless your kitchen was especially warm?). I'm stumped!

hii, first time on this channel :) i just wanted to say that you are so beautiful, so so pretty and like woah good energy B) thank u for the video and the recipe but it would be even better if you could use “european units of measurement” (idk if that makes sense sorry :/) such as a litre, a gram, etc.? because im french so i don’t really know what a cup is and the “conversion websites” are pretty bad as it can change depending and the thing you are measuring right? ugh tbh idk im not really a cook😩

Thank you! For this cake, it's best to stick with mascarpone, as it's critical to the cake's texture (ricotta has too much water and won't freeze well). I hope you like the cake!

Hi there, the almond extract is really important tot he flavor of this cheesecake, but you can swap it out for the seeds of 1 vanilla bean (or vanilla bean paste), if you prefer!

My daughter visited last weekend and left a carton of mascarpone and I’m trying to figure out what to do with it. Well, I don’t have a hand or electric mixer, I will probably use a ready-made graham cracker crust, I don’t want to buy almond extract but do have vanilla. It might be hard to whip cream using a whisk but I’m sure it’s possible. I have apricot jam and that should be ok. So other than those little discrepancies do you think it might work? I don’t know why I don’t have a mixer or beater, Maybe trying to simplify my life at some time? Don’t know.

Hi there! You can make whipped cream with a large whisk, but it will take a bit of time (and some arm stamina!). A graham cracker crust works well. The almond extract is important for flavor, so I'm wondering what else you could add in its place. Do you happen to have amaretto at home?

Hi there! Yes, this cake does need to be frozen to fully set up. However, once you slice it you can let it sit at room temperature to soften before eating. I hope you enjoy!

Maria Zakaryan yes, but powdered sugar is sweeter than granulated so you’ll want to cut back on the sugar (you can add it to taste). I hope you like the cheesecake!!!

Cream cheese won't give you the same texture in this cake, so it's important to use mascarpone. However, you can find it at most grocery stores! Great question!

Nhung Trang this cake is frozen, which creates the rich, thick texture. It will soften as it sits (but like ice cream, it will eventually melt if you leave it out for too long).

Marife Alog you should not bake this cheesecake, as it contains no binders and eggs (the cream and mascarpone will just melt down). I hope you like the cake!

wow !!! in Europe we never freeze mascarpone .... actually you don't freeze any cheese cos it changes the structure of the cheese......
