Today, I am sharing how to make an amazing flourless chocolate cake that is dairy-free and gluten-free. It feels very light in your mouth yet still moist and rich. I would love you to give this cake a try, it might become your go-to chocolate cake ;)
Ingredients:
Enough amount for 1 8” cake pan
• Dark chocolate: 300g | 10.6oz
I recommend couverture 60%. Or between 50-70% as your preference.
• Salt: A pinch
• Oil: 100g | 3.5oz
• Coffee (Strong): 50g | 1.76oz
• Dark rum: 2 Tbsp
• Egg: 6 large eggs (about 310g)
• Granulated sugar: 100g | 3.5oz
Bake(Preheated) at 350F | 176C in a water bath for about 40 minutes.
Chill in a fridge for more than 5 hours ideally before you slice.
*Adjust the time & temperature depending on the oven.

Additional note: * If you don't want coffee, use hot water instead. * You can use butter instead of oil but the texture gets heavier after it's cooled down. It'll rise slightly less. * You can omit alcohol or reduce the amount if you prefer. Hope you enjoyed!!

I’ve made this cake twice and it’s absolutely perfect. Definitely a crowd pleaser, with the added bonus that it’s gluten free.

Hi Aya, thank you for sharing the recipe. Will this be suitable for 2-3 layer cake with buttercream? And can I use Xylitol or Erythritol instead of the regular sugar?

Hi, I've just put mine in the fridge to chill. I noticed my chocolate, oil, coffee mixture was thicker than yours when melted and when cooled the oil was slightly seperating, is that ok (I used 135g dark 45% chocolate and 165g of 70% chocolate. Bowl was not touching water and water was turned off before putting bowl on top. My cake didn't rise quite as high as yours. I weighed everything exactly. Just another question, how do we test for doneness? The internal temp of the cake was 72c after 36 minutes in oven. Was that too high? Should it have a wobble or a slight shrink back from edges? I have my fingers crossed that it turned out. Will taste tonight after required 5 hours chilling time.

I was looking forward to the recipe & I'm sure its amazing but my daughter is anaphylactic with eggs as well. What's healthy for one person can harm another person. You'll all have to enjoy it instead of us.

Hello Ayah. Thanks for this wonderful cake it does look so tasty, just want to know can we decrees the number of eggs from 6 to 4 or 3?

It's possible but it gets a lot more dense. If you want, you can make a half batch of the recipe with 3 eggs. I used 8 inch pan but you can use 6" pan in that case. Bake shorter time with a half batch.

Hello Aya-san! should i whip the batter till ribbon stage first then whip for 5mnts low speed? For How long should i whip the batter before i whip 5 mnts in low speed ? Thank you

Hello! Yes! It depends on how powerful the mixer is but with 8/10 speed setting, I whip for about 5 minutes to get that fluffiness.

The texture is different to a regular cake with flour, I would say it’s more like.. soufflé cheesecake. Like the combination of classic gateau chocola and soufflé cheesecake. Only the texture! And it’s possible to bake with coco powder. You’ll need to play around with the amounts of coco powder and sugar. I personally recommend dark chocolate though!
