Hey Friend! Its time for No Spend January and February with the #threeriverschallenge. I'm not grocery shopping for 2 months(well... mostly) and relying on everything I've stored in my pantry! We are going to be resourceful, substituting where needed, trying new recipes and making the best use of what we have! I hope you'll join me for this Pantry Challenge.

Canned carrots ways to get them eaten fast. Drain the carrots well, then spread on a parchment lined baking sheet, drizzle with a little honey, and then sprinkle very lightly with your familes favorite spice. My family loved ginger or chili powder. Another option substitute them into a zuchinni bread recipe. Another favorite in my family is soups and stews made in the crockpot.

I love watching these. I am a retired hospital dietitian and I enjoy striving for zero food waste. Every week or two before I grocery shopping I wipe out my fridge and check my pantry. I keep a basket on my counter and anything I find that needs to get used up goes into the basket. Every morning I look in my fridge and plan my meals based on what needs to be used from there. I love to turn leftovers into something else. If you are going to keep a lot of food in your house you need to monitor it.

You can add your carrots to homemade spaghetti sauce. Just mash them up. It adds sweetness to the sauce without adding sugar. You can hide them into chili too.

Hi Kelsey. I hope you are having a wonderful holiday season. Those carrots! I make a wicked carrot soup that’s cheap and so darn easy. Just roast some garlic and onions. You can’t roast the carrots cuz they’re cooked but it should still be good. Put everything into the blender. Add a can of coconut milk, some ginger powder, some broth and salt and pepper. If you are interested in exact measurements let me know. It is sooo delicious. I make it and freeze it in mason jars, because I live alone. I love it so much. I also love a good pantry challenge. @@seedandsparrowhomestead okay here it is 😋 2 Lbs carrots 6-8 cups of water or broth 1 onion 4 cloves garlic 1 tsp ginger powder 1 can of coconut milk Salt and pepper to taste Roast carrots, onion and garlic in the oven. Add broth or water to a pot and add roasted veg and ginger powder. Cook until really tender. Then add coconut milk and toss it all into a blender. Blend until smooth. Sooooo smooth and yummy. Enjoy 😉

I'm still working through 10 year old canned meat. I had too much of a survivalist mindset, and life got in the way the last several years. I am also using 8 year old peaches for cobbler. Delish. 3 years ago, I put up 175 quarts of green beans. I am reminding myself to use 3 quarts a week now. During this pantry challenge, in addition to using my meat in the freezers, I am trying to empty 10+ jars a week.

We limit grocery shopping to March, June, and December each year. We buy in bulk and last year started a good sized garden. My goal is to go to just every 6 months. 🤞

I'm doing this for the first time this year! It's just my husband and me. We have very different diets so I've got food stored for each of us. I can, freeze and keep my pantry stocked. I'm overflowing at the moment and it's a bit overwhelming. So I'm going to work through what we have in the month of January. I'm excited!

One of my favorite ways to use canned carrots is in a quick chicken noodle soup or soup of some kind. I usually have cut celery and already cooked chicken in the freezer (or if you have canned) and it makes an extremely quick soup. Canned broth, carrots, cooked chicken, frozen celery and an onion. The frozen celery also cooks very fast because after being frozen all the cell walls are damaged but its perfect for soup.

Zero waste is great. Using what does not get eaten for various reasons is a good goal and forces us to get creative. I dry aloe now because it keeps longer with less space, and some of it can be ground into flours or powdered to add to other baked goods too. My goal is to do it without using electricity. I water bath can and pressure can over my wood cook stove as much as possible. Electricity is very expensive where I live so it is necessary to continually reduce my electric use. Yes, it is more work, but it also gives me plenty of practice should we not have a grid or any supply change interruptions. I am doing the challenge for the first time too.

I love seeing how well different channels do with this challenge. One channel I watch says she is doing the challenge but has bulk buying food 3 times in the last 3 months and thinks she is doing good 😢. The way you do it is great and understandable that you need milk products, especially since you have kids. Good luck with your challenge 🥰

I also canned a bunch of carrots because we had so many. Besides using them in soups, i like to drain and mash them and use in place of sweet potato or pumpkin in muffins and breads. Also for extra winter squash or pumpkin, I'll peel and cube them, sprinkle with sugar and pumpkin pie spice on a baking sheet. Bake until tender, then dehydrate to make shelf stable. Makes a great candy alternative.

I will be participating in the challenge, starting the middle of January - not a homesteader, and not much luck gardening, but believe in using what we have to avoid/eliminate food waste. I first did this when we were locked in from an ice storm and I found it really fun to get creative with what I had. Jessica has made it so inspirational and it is so nice to see all the followers. Thank you for your take on it and motivation 🙏

Doing the challenge for the first time! Not a homesteader.. we enjoy gardening. I expanded my canning skills with a pressure canner. Makes a huge difference when you come across bargains! I will give myself a small budget for dairy and eggs. Looking forward to seeing your ideas and all who participate!

I am doing the challenge this year! It starts officially for me tomorrow! Got prepared today with the shop I would have done end December, but my sweet husband was home and I didn’t wanna make the trip (an hour), so did that today and we’re ready to go. Going to try and do the full two months and give myself a very little grocery budget for our milks and my creamer etc. I’m excited to give this a go! Love your channel 🤍

If there is an amount of wheat flour that you won't notice or mind in everyday baking, say 3 parts AP to 1 part wheat, pre-combine them in your working pantry container to use up without extra hassle.

I feel that urge to not use the things I have preserved. Mostly out of fear and caution. I gifted close to 20 jars of preserved things for the holidays to family and friends. It really helped me realize thing are preserved to be used. I am currently working towards being able to do the pantry challenge next year. I am still absorbing ideas and lessons in the mean time.

A way to use your carrots is make what my kids call orange potatoes. Add carrots into mash potatoes. My kids love them.

Planning on doing the challenge this year...same as you small budget for dairy. PS. Our NYE tradition we started 11 years ago when our youngest was 1 was renting a hotel room with a pool and hot tub. Our kids love to swim and we always have lots of families join so we have a good time bringing in crock pots and finger foods, swimming and games. Happy New Year

This is going to be my first year doing the challenge. As for the potatoes... if you can freeze dry the shredded potatoes, then they make the best hashbrowns! Hugs from Esquimalt

Dehydrate your carrots they taste better. Canned carrots also taste better with kitchen bouquet on stew or pot roast. I can or dry potatoes if they start to get away from me in storage..both ways taste good and are user friendly.

I have heard the phrase "OG" in several videos....am I the only one who has no idea what it means? I am ready to do this challenge to a certain degree. I have completely cleaned out and reorganized my pantries and realized I am not using certain items like I could be. It's nice to use up those random items and get back to the basics of what I use regularly. Excited to see you creatively use your bounty!!

jarred carrots make a super moist sweet bread! Mash them up and use them in place of shredded frozen zucchini for a "carrot bread" instead of zucchini bread! I'll see if I can locate my grandma's recipe if you're interested?

For your canned carrots you could use them in muffins or carrot cake….they’re delicious that way and then they don’t go to waste :)

My pantry challenge this year is to clean and organize my pantry - which isn’t stocked well.. but it is stocked randomly… so I think if I could summarize my plan for it - “intentional pantry” is my goal.

I am going to be participating even though we are not able to store a lot of food. I am going to try to prepare meals with what we have on hand and only buy what we have to....dairy, fresh produce and a little protein. It sounds like fun!

Hi Kelsey, I watch and enjoy your videos. Just wanted to share one of our favorite ways to eat carrots is from a recipe I found many years ago called pennies from heaven. For a couple of store bought cans I place not quite 2 tablespoons of butter in a medium skillet, add about the same amount each of brown sugar and honey. Bring that to boil and add the drained carrots. Return to boil, reduce heat to medium low, continue cooking until the liquid is reduced and becomes a glaze on the carrots. You can adjust how much sugar or honey to suit your taste of how sweet you want them to be. God bless and take care

I need to use up stuff in my pantry and freezers. Bursting at the seams. That's my challenge to myself. Cooking for just myself can be hit or miss depending on my pain levels on those days, so i want to turn meats and pasta, veggies into freezer meals that require very little bandwidth to prepare. Still freezer space, but more readily consumed.

Hi Kelsey! I’m really looking forward to seeing what you do this pantry challenge. I’ve noticed that you use big jars of spices from the grocery store. I used to use the same brand. Now I buy most of them from Thrive Market because they are organic and the taste is much better. I realize that they are more expensive but I wonder if you’ve ever looked into it. Love your channel! Try The Prairie Homestead honey whipped carrot recipe. Although I have yet to try it, it looks really yummy! I’m trying it myself soon! A good way to use up and disguise the flavor you don’t care for. Excited for the new content coming… always an inspiration!

I just came upon your video after watching Three Rivers Homestead. I plan to do the challenge this year after following it last year with TRH. I'm hoping to spend no more than $25/week on fresh foods. I'm retired, so just me and hubby at home. I have a full upright freezer and 3 large shelving units in my basement (2 units have food, and 1 is non-food items). I also have 5 gal. buckets with various beans, rice, flour, and sugars. I love to bake breads, make soups and stews, etc. I look forward to getting some new meal ideas from you.

I'm surprised you haven't freeze dried those carrots yet...carrot powder is super versatile and great for sweetening savory dishes and balancing flavors in tomato based recipes.

Hey girl! On the canned carrots (I don't love them either!) but I found a use for them... in bread! They can be put in quick breads much like zucchini, banana, or pumpkin! The addition of a sweetener helps to mask the flavor. I would suggest maybe a mixture for your first attempt... like in a pumpkin bread recipe, half the pumpkin and sub in the mashed carrots. If your family can't tell carrots are in there, try a full carrot bread recipe. Also, you can swap the carrot in sweet potato bread/roll recipes. Aaaaand, pair the carrots with some of that whole wheat flour and you are working through 2 of the lesser used items in the pantry at the same time! Win, win!!!

I'll watch some of the channels that I usually don't to see what and how they are cooking and preserving their food items. I get lots of great ideas and sometimes I find a great channel to watch every week, like yours!

For the canned carrots, have you thought about a carrot soufflé? Or even carrot muffins, carrot bread or cake. You can actually use canned carrots to make all of these things. You just adjust your recipe after you have them all mashed (or puréed) up- use them like you would mashed pumpkin in baked recipes. You can also use the canned carrots (puréed) in pasta sauce to make bolognese. Hope these ideas help. Have a Happy New Year!

As always, I love these videos. It’s such a great way to get ideas and encouragement to try new things. I’ve done heavily modified versions but this year I’m really going to try and keep to only fresh fruit and dairy purchases. I have well stocked freezers that need to be worked thru as we prepare for our first ever whole pork purchase. Plus I’m very determined to get more meals in a jar on the shelves for quick meals during the busy seasons of life (aren’t they all busy? lol). About whole wheat flour, try adding a small amount with your white flour in most non fancy things. Very gradually increase the amount. You may find that your family will get to the point where they only want those item with mostly whole wheat. Pancakes, waffles, muffins, quick breads, biscuits, fruit crisps, dumplings, many cookies etc. will all work with at least some whole wheat. I grew up in a household where whole wheat flour featured prominently. As an adult I don’t like the all white flour version of many things and I imagine growing up with it played a role.

Really look forward to this time of year with videos about using up stored foods. I also love the gardening aspect. Your videos are usually instructional, entertaining, to the point, and very human. This is going to be a great year! Especially interested in your grain ideas, squash use, and garden planning. I DO NOT like canned carrots and after having to go buy more jars I finally dumped the 3yo carrots out to use the jars. They were just a reminder of what not to do in the future and my failure to try it small first then go for the bigger job. I have saved a very few jars of them and will anxiously await what you do with them. Drown them in sugar, butter, nuts! YUK but I think I bought them bulk and they were bitter to start with so lesson learned.

Have you tried adding some of the carrots to tomato soup and puréing it all together? May mask the carrot-y flavor! I LOVE Pantry challenge videos!

Canned carrots- hmmm- curried carrot soup, put them in soups or stews, mash them up and put them in muffins, cakes etc.. also- don’t you chickens deserve a winter treat..😁

Hi Kelsey! I'm from Nova Scotia Canada and love your channel! I heard about the challenge from Chelsea on Little Mountain Ranch too. I've been telling my husband that for the winter we are going to eating mostly from our"cold room",( which is actually a pantry in our basement with an extra fridge, one of our freezers and shelves full of canned foods that I love to do) and freezers, so I guess I am participating too. Only plan to purchase milk, butter and personal hygiene items for January and February for the most part. We prefer fresh carrots and since they are quite affordable I choose not to can them. To use up some of our whole wheat flour I add it to my bread recipies, to cookie recipes and use only whole wheat flour when making date and mincemeat squares ( no one will even know the difference!) Can't wait to see your videos as you go through the challenge. Happy New Year to you and yours.♥️🙌

Looking forward to seeing how you do pantry challenge. Another idea for your canned carrots….. pureee with a quart of applesauce and some ripe bananas and make dehydrated fruit leathers. I promise they’re good!

I like to hear how others do this challenge. I allow myself one week’s budget for the month. We are well stocked so I try to only buy perishables like salad and milk and what is on the very best sale that would be future stock. I did this last year through March. Freezer items come first along with oldest canned goods. I also look up new recipes to add variety.

I started the pantry challenge the day after Christmas! My husband is not working right now so trying to save money and we are moving in March so trying to use up everything I can so we don't have to move it! Good luck everyone!

Gonna give this a good first shot! Wish me luck! I do have to buy minimal dairy and juices. I want to start making my own bread and have all that so this should be interesting! I'm excited! :) I have to confess, I thought about this and tried holding back on some things I put up this year (my first applesauce and ham and bean soup, etc. in the freezer).....um it's already gone! lolol I got into it early and it was like wow, this is soooo good! lol Lesson learned, next year, MAKE MORE!!! lol

I love this challenge! I have done a modified version last couple yrs. My husband works out of town every other month and I don’t cook for myself much the months he is gone. So my challenge will be January thru March. Him being home January and March and me alone in February. I’ll still stick to the challenge when he is gone though.

Really good honest video. I’ve been canning for about three years and I find I’m still in the “I don’t want to use it phase” because I worked so hard to set us up for food security - but it’s time.

I don’t like canned carrots either so I use them to sweeten my homemade tomato sauce and some in my chili. Try a batch of ginger carrot soup.

I will be participating in the two month challenge. I am allowing myself $25 a week for fresh veggies and cream for my husband's coffee. I plan on saving the money I would normally spend and applying it towards the money we are saving to purchase our homestead if we ever find it. Love your channel, keep doing what you are doing❤❤❤

Hi Kelsey. Fellow south central Pennsylvanian here. I'm from North York. I did the pantry last year for one month but will try two months this year. My plan is to only buy dairy and fresh produce only when needed. I cook the majority of our food from scratch which saves us a TON of money not to mention the quality and taste is much better. I am a backyard gardener and love preserving food through freezing, canning and dehydrating. My hobby is learning to do things the way our ancestors did and started making my own own medicinal remedies and salves. I look forward to seeing how you will use your pantry stores.

I’ve decided that I’m going to make a pantry list. And I have a freezer and my refrigerator freezer that really need used. So I’m in ! Limited budget for milk and maybe some cheese I have a good bit but you don’t know!

I'm not a huge fan of using whole wheat flour in baked goods either .... however .... years ago I found a recipe in a cookbook for a berry cobbler that uses ground pecans in the crust, using whole wheat flour instead of AP in that recipe is SO good. It just lends to the nuttiness and the flavor is unlike anything else.
