To ensure that the dough rises well, it is crucial to maintain an adequate base temperature, generally between 54 and 60 °C. This base temperature is obtained by adding the temperatures of the water, flour and kitchen.
For example, if the temperature of your kitchen is 20 °C, that of the flour is 19 °C and that of the water is 18 °C, then the sum of these temperatures is 57 °C, which is ideal for the dough to rise.
