For example, if the temperature of your kitchen is 20 °C, that of the flour is 19 °C and that of the water is 18 °C, then the sum of these temperatures is 57 °C, which is ideal for the dough to rise.

Oui effectivement, pour avoir une belle boule pour la vidéo. Mais on peut le cuire juste après avoir retiré les bulles d'air.
