I have been using your recipe for making weekly sandwich breads at home and my family loves the bread! I use less instant yeast as I bulk ferment the dough in the fridge for 12-24 hours. I did some troubleshooting though. I bake in 160°C preheated convection oven (fan on) for 35min. I tried baking it using the temperature setting you mentioned but the bread turned out not fully baked. Thank you for sharing this recipe!
