Making spinach without overcooking it into a mushy green sludge is easier than you think. Try this amazing method for spinach next time you feel like cooking a healthy meal and you will not be sorry!!
1 lbs Spinach
3 tbsp EVOO
1 tbsp unsalted butter
5 cloves smashed garlic
1 shallot sliced into 1/4 inch pieces
1/2 tsp chili flakes
1/2 lemon juiced
maldon Salt to taste

I fry bacon. Remove bacon from pan to cool. Sauté garlic and shallots in the bacon fat. Add spinach. Red pepper flakes. Salt pepper. A dash of vinegar. Cook it down to wilt consistency. Serve with crumbled bacon on top.
